I use a prepared yellow cake mix which I strew over canned peaches. Dot with butter and bake.

2 C. Bisquick
2 C. milk
dash of cinnamon
2 sticks butter, melted
2 C. sugar
2 large cans peaches, drained

- Preheat oven to 375 degrees

- Mix Bisquick, milk, cinnamon and 1/2 C. of the sugar. Stir in butter and put in a 13X9 casserole dish.

- In a separate bowl, mix peaches and remaining sugar. Spoon over batter.

- Bake 50-60 minutes. Enjoy!

NOTE: This recipe is similar as one above. However, preparation is different. I guess great minds think alike!

Peach Cobbler for one:
I sprinkle Peaches/Cream Instant Oatmeal packets over canned or fresh peaches with a couple dabs of butter. One packet is usually enough for a person with as many peaches as you like. Pop it in the oven at 350 degrees for 20 minutes. Quick and easy.

Also works with apples and apple flavored oatmeal, etc.
