Re: taco salad
Classically, just make some taco hamburger.
Then on a layer of tortilla chips, make a layer of your favorite lettuce.
Ladle on as much taco meat as you want, and top with classic taco toppings...
tomato, onion, sour cream, guacamole or avocado, hot sauce, black olives, etc.
This is a VERY customizable dish. You can substitute meats.. use carnitas pulled pork,
or taco seasoned grilled chicken (Tyson makes some that are great for this), or fajitas
meat..
You can use whatever "salad" components you want to use, and even slather on a little
ranch dressing for a change!
Oh.. lots of people use their favorite salsa as the "dressing".
You can also buy cute little bowls made from tortillas, but a bunch of tortilla chips works fine.
Experiment and enjoy!
It's a LOT like a plate of nachos, with more salad stuff...

Re: taco salad
4-10-12" flour tortillas
1 lb. hamburger
1-2 chipotle peppers,minced
1-2 jalapenos,chopped
1/2 cup chopped onion
1 pkg. taco seasoning mix
4 cups shredded lettuce
sour cream
guacamole
1 cup shredded cheddar cheese
2 Roma tomatoes, chopped or salsa of choice
4 scallions,sliced
4 Tsp. chopped cilantro
Prepare tortilla cups then cool on a wire rack.
Brown hamburger, onion, chipotle and jalapeno peppers then drain.
Prepare taco meat according to pkg. directions.
Place 1 cup lettuce in each cup.Top with 1/4 lb. of taco meat followed by a
layer of sour cream and a layer of guacamole.
Sprinkle 1/4 cup cheese over each followed by tomatoes, green onions and
cilantro.
When I make mine, I season my beef with taco seasoning. Most of the time I bake my tortilla shells in the oven - just hang them over an inverted oven proof bowl to get the size you want, using as many shells as you need (depending on size) bake at 350, invert on serving dish.
I place my chopped lettuce in my baked shell, place meat on top, top that with grated cheese (Cheddar and Monterey jack or Pepper Jack), top that with chopped green onions, sliced black olives, tomatoes or salsa of choice. Sometimes I use sour cream - sometimes I don't - I am not a fan of guacamole - had some bad stuff years ago and it's a bad memory.
Then I usually turn it upside down and smash it all up and enjoy it! Looks nice before I mangle it though. (heck - it all looks the same once it gets inside your innards anyway) LOL

Re: taco salad
When I make taco salad I prepare the hamburger the same as KW. I chop the lettuce and tomato and a handful of salad olives. Toss together with Wishbone Italian salad dressing and put it over a pile of cheese Doritos, add some shredded Mexican white cheese and serve immediately.
