    Default sausage, chicken and stuffing pie?



    Hi, i always remember at school i had a sausage chicken and stuffing pie at school with white sauce and a pastry crust but i do not know how to go about making it so i was wondering if anyone could give me a recipe for it preferably in UK metric units thankyou.

    I'll take a stab at it - it's really quite simple -

    for your crust you can use a regular pie crust recipe or an herbed crust recipe is you want - you would prefer UK metric units but I know you can find a recipe with those -

    you can use any white sauce recipe, or a can of creamed soup combined with a little milk, or even a gravy or sauce of choice

    start with your cooked and diced chicken and sausage, add whatever vegetables you want and crumble some stuffing mix in it

    if you use an herbed stuffing be careful of your seasonings

    You can somewhat follow this - if it helps -

    1 recipe pastry for a (10 inch) double crust pie
    55 g butter, divided
    1 small onion, minced
    2 stalks celery, chopped
    2 carrots, diced
    4 g dried parsley
    2 g dried oregano
    salt and pepper to taste
    2 cubes chicken bouillon
    475 ml water
    3 potatoes, peeled and cubed
    210 g cubed cooked turkey
    25 g all-purpose flour
    120 ml milk

    1.Preheat oven to 425 degrees F (220 degrees C). Roll out bottom pie crust, press into a 10 inch pie pan, and set aside.
    2.Melt 2 tablespoons butter in a large skillet over medium heat; add the onion, celery, carrots, parsley, oregano, and salt and pepper. Cook and stir until the vegetables are soft. Stir in the bouillon and water. Bring mixture to a boil. Stir in the potatoes, and cook until tender but still firm.
    3.In a medium saucepan, melt the remaining 2 tablespoons butter. Stir in the turkey and flour. Add the milk, and heat through. Stir the turkey mixture into the vegetable mixture, and cook until thickened. Cool slightly, then pour mixture into the unbaked pie shell. Roll out the top crust, and place on top of filling. Flute edges, and make 4 slits in the top crust to let out steam.
    4.Bake in the preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 20 minutes, or until crust is golden brown.


    here's a crust recipe - this is for a 9-inch pie - I don't know if you need a single or double crust and you didn't say if the stuffing was the topping or not

    155 g all-purpose flour
    2 g salt
    115 g butter, chilled and diced
    60 ml ice water

    1.In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.
    2.Roll dough out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.


    also - stuffing can also be used as the crust

    A suggestion would be to go to the Big oven site and download the free software. It will convert the recipe ingredients to metric, and most likely you will like the software for storing your recipes.
