Deep-fat frying temperatures without using a thermometer:

A 1-inch cube of white bread will turn golden brown:

345* - 355*F in 65 seconds

355* - 365*F in 60 seconds

365* - 375*F in 50 seconds

375* - 385*F in 40 seconds

385* - 395*F in 20 seconds
