Default Fried Zucchini Wedges

Hi All. Can anyone give me advice on how to fry zucchini wedges? Every time I try they come out clumpy instead of nice and smooth like the kind you find at a sports bar. thx

are you freezing them first? frozen ones "look" better when deep fried

are you using a batter or crumbs?

have you tried baking them?

Zucchini Wedges

(Use your favorite cheese in place of cheddar.)
1 large onion, minced
1 garlic clove, minced
1/2 cup vegetable oil
4 eggs, slightly beaten
1/2 cup grated Parmesan cheese
1 tablespoon minced fresh parsley or 1 teaspoon dried, crushed
3 cups shredded zucchini
1 cup biscuit/baking mix
1 cup (4 ounces) shredded regular or reduced-fat cheddar cheese

Preheat oven to 350 degrees. Grease two 9-inch pie plates.

In a large bowl, combine onion, garlic, oil, eggs, Parmesan cheese and parsley. Stir in zucchini, biscuit/baking mix and cheddar cheese. Divide between prepared pie plates.

Bake until golden brown, 25 to 30 minutes. Cool completely on a wire rack. Makes 16 servings (8 slices per pie plate).


Zucchini Stix

Nonstick olive oil cooking spray
3tablespoons seasoned dry bread crumbs
2tablespoons grated Parmesan cheese
1egg white
1teaspoon reduced-fat (2%) milk
2small zucchini (about 4 ounces each), cut lengthwise into quarters
1/3cup spaghetti sauce, warmed


1.Preheat oven to 400°F. Spray baking sheet with cooking spray; set aside.
2. Combine bread crumbs and Parmesan cheese in shallow dish. Combine egg white and milk in another shallow dish; beat with fork until well blended.
3. Dip each zucchini wedge first into crumb mixture, then into egg white mixture, letting excess drip back into dish. Roll again in crumb mixture to coat.
4. Place zucchini sticks on prepared baking sheet; coat well with cooking spray. Bake 15 to 18 minutes or until golden brown. Serve with spaghetti sauce.

Batter-Fried Zucchini Sticks

1 cup sifted flour
1 teaspoon baking powder
1/2 teaspoon salt
1 egg, lightly beaten
1 cup milk
2 tablespoons oil
1 pound zucchini, cut into 3 or 4 inch sticks
Flour (optional)
Oil for deep frying

Hollandaise Sauce
4 egg yolk
1 tablespoon water or dry white wine
1/2 cup butter, softened
1/4 teaspoon salt
Dash black pepper
1 teaspoon lemon juice

Sift flour with baking powder and 1/2 teaspoon salt. Combine egg, milk, and 2 tablespoons oil. Slowly add to dry ingredients, beating until smooth. Pat zucchini sticks very dry and if desired dredge lightly in flour.

Dip pieces, one at a time, in batter. Fry in deep fryer heated to 375 degree until golden brown, 1-2 minutes. Drain on paper towels. Sprinkle with more salt, if desired.

To make sauce, beat egg yolks until thick and light colored. Mix in water and transfer to top of double boiler set over barely simmering water. Heat and stir 2-3 minutes until warm, not hot, and eggs have begun to thicken. Add butter, 2 tablespoons at a time, beating continuously until well blended. Cook, beating 2-3 minutes until sauce thickens enough to coat back of spoon. Remove from heat and stir in 1/4 teaspoon salt, pepper and lemon juice. Serve immediately with zucchini sticks.

Batter Fried Zucchini

pancake batter mix
zucchini
oil for frying

Get the ready made pancake batter mix and mix it with enough water to make a thick batter. Slice the zucchini about 1/8 thick. Heat the oil to hot but not smoking, Dip each slice of zucchini in the batter and fry until golden on each side, salt while you drain.
