Proper Seafood Handling
Always thaw frozen seafood in the refrigerator or under cold running water. A microwave can be used following manufacturers' directions. NEVER THAW AT ROOM TEMP ON THE COUNTER!
Remember to always wash your hands thoroughly using hot soapy water after handling raw seafood (or any other raw protein foods).
Before cooking, always rinse under cold water - this removes any surface bacteria.
If marinating, be sure to marinate IN THE FRIDGE - never at room temperature and ALWAYS discard the marinade after use.
Be sure that the juices from raw seafood don't drip onto cooked foods; this is known as cross-contamination.
