Default Garlic

If you use garlic often, chop several heads of garlic at once.

Place chopped garlic in 1 tbsp olive oil in an airtight glass container. Store in the coldest part of the refrigerator for up to 2 weeks.

Similar with fresh ginger, peel and chop, it stores in the fridge forever as long as you keep it covered with sherry. The handiest part is if you run out of ginger (god forbid!) you can always use the sherry for a similar flavour.
