Question Can You Over Slow Cook A Roast?

I have a recipe for pot roast of beef which has potatoes, carrots & onion in the bottom, a 2 to 3 pound boneless roast on top of that, then 1/2 cup water or brother poured over all. It says to cook on low for 10 to 12 hours or high for 5 to 6 hours.
I would rather cook it on low and I was wondering if I could brown the roast and put the meal on the night before, say around midnight, and cook until around 6:00 p.m. the next day? Or will it be too much? Should I leave the vegetables out?
I can't seem to find any information on overcooking a roast. Thanks for your help.

Cook as stated on high for 6-8 hours. Reset control to low. Remove lid on crockpot for ten minutes. Turn roast over and let it go for several hours. It won't dry out!

Sometimes when I don't have time to do everything in the morning, I'll brown my roast the night before and refrigerate, also chop up my veggies and put in a bowl of water in the frig , then in the morning I just through everything in the crockpot and cook all day. You can save a lot of morning work by prepping the night before, like browning meat or chopping veggies. I also have mixed everything in pot the night before , a big timesaver if you use a recipe that uses a lot of spices or several ingredients and put it in frig, set it out when I first get up, so pot can warm up and then put it into cooker when i get ready to leave.

I never had an accident leaving my crock pot for 8-10 hours while I'm at work.
I always leave it on the stovetop to insure nothing with fall a touch it etc.
I been doing this for at least 13 years with no problems.

Enjoy, it's the best way to cook and your house smells awesome when you come home.

I love to use my crockpot - but only when I am home. I will not leave it plugged in without being there to keep an eye on things. Sure it frees me up to do the lawn, canning, preserving, painting, etc. but I am still there to watch it. It's my opinion - my friends leave theirs' on while they work - but I will never chance it.

Sauce will overcook in a crockpot; so will noodles/pasta; some foods will get "watery" if left in too long.....veggies hold up well with extra cooking time.

I never leave it on during the day. I always cook in my crockpot at night. Started this when I got my first crockpot. I lived at home and when my mother felt how hot the outer area got she had a fit and made me take it to the basement.
Also, I can use the HIGH setting for shorter periods.

I put everything in mine the night before then I put it in the sink before I leave for work.
If anything happens, the sink should catch it. Have fun...

Here is my favorite crockpot roast recipe:

1 roast (any cut)
1 package (dry) Ranch Salad Dressing
1 package (dry) Brown Gravy Mix
1 package (dry) Italian Dressing Mix

Place roast in crockpot and sprinkle the three packages of dry ingredients over top of meat.

Pour about 1/4 cup of water into the bottom of the crockpot.

Set on LOW for 6-7 hours. Enjoy!

I always leave it on during the day while I'm gone. That's the main advantage of a slow cooker, so you have a hot meal when you get home eight hours later.

I will even keep it going for longer than a day when I'm making a good soup or broth. Saves tying up the stove.

For the night time I use my 4-cup "crockette" and make Steel Cut Oats. You get perfect oatmeal when you wake up in the morning. No standing over the stove for extended periods.

Your crockpot is your friend.
