Cajun Roast with Gravy
3 to 3 ½ lbs. round sirloin tip roast, boneless
¼ c. all-purpose flour
1 T. garlic red wine vinegar
1 T. Cajun seasoning (may reduce seasoning to 1 t. for less spicy flavor)
1 T. brown sugar
1 T. olive oil
6 c. yellow gourmet potatoes (Yukon Gold), chopped
2 medium onions, diced
1. Place roast in crockpot.
2. Make a paste with the next 5 ingredients. Spread over roast.
3. Add potatoes and onions to crockpot.
4. Cover and cook on low for 10 to 12 hours.
5. Just before serving, scrape paste from top of roast and stir into the gravy.
