Pizza Soup

1 can chicken or vegetable broth, low sodium preferable
1 can diced tomatoes w/juice
1 can favorite pizza sauce (I prefer Chef Boy R Dee w/cheese, *or* Cento Pizza Sauce)
I link Italian sausage, browned (optional)
1/4 cup pepperoni, sliced in half (can use Turkey pepperoni)
1/4-1/2 cup sliced fresh mushrooms, sauteed if desired (optional)
1/4-1/2 tsp italian seasoning
Desired amount parmesan cheese
Desired amount grated mozzarella cheese or pizza cheese mix, to top.
Whatever other pizza toppings you like, in whatever quantity you like.

Add all ingredients except mozz/pizza cheese to slow cooker, cook on low for 6-8 hours, or high 3-5 hours.

This is a favorite of my family's, even my ex hub makes it regularly for his new wife and her kiddos. So customizable, really the basics are the broth, diced tomatoes, pizza sauce, Italian seasoning and Parmesan cheese. After that customize as desired. I have found the sausage and pepperoni add needed depth and spice to the soup, but it could easily be made vegetarian.

The only suggestion I have is adding sauteed bell pepper and sliced olives AFTER the soup has cooked. They can both over-power the flavor of the soup, and I speak from experience.

I top with cheese and nuke until the cheese melts, then I serve with crusty rolls or garlic bread.
