Default Amazing Crustless Cajun Quiche

AMAZING CRUSTLESS CAJUN QUICHE

12 oz low-fat breakfast sausage
3 green onions, sliced
1 stalk celery, minced
1 bell pepper
kosher salt
fresh ground black pepper
3 large eggs, or 3/4 cup egg substitute
3/4 cup half and half
1 tablespoon cajun seasonings
1/2 cup shredded cheddar/jack cheese

Preheat oven to 350 degrees. Spray a 9 inch glass pie plate with butter-flavored non-stick coating. Brown sausage in skillet. When sausage is almost done browing, add green onions, celery and bell pepper. Season with salt and black pepper. Cook vegetable and sausage mixture 3 minutes, until softened but not mushy. Remove from heat and set aside to cool slightly in skillet.

In a bowl, whisk together eggs with half and half, and season with the cajun spices. Place sausage mixture in prepared pie plate, sprinkle shredded cheese over mixture. Pour the eggs evenly over mixture.

Bake quiche in 350 degree oven for 30 minutes, or until quiche does not wobble in center when the pie plate is gently shaken. Remove from oven, let rest for 3 minutes, then invert onto a plate.

Serves 6

Variation: If you want to add some extra heat to your breakfast, use a spicy sausage blend instead of the low-fat.

The bell pepper should be diced, sorry all!
