Cream of Wild Mushroom Soup
Whether you like the flavor of wild, shiitake, cremini, or oyster mushrooms, or even plain white ones, they'll all work well in this creamy soup.

Serving Size: 1 cup
Ingredients:
sliced wild mushrooms (use shiitake, cremini, oyster, or regular white mushrooms, if wild are not available) - 5 cups
dry sherry - 1/4 cup
minced red onion - 1/2 cup
low-fat, low-sodium chicken broth - 1/4 cup
minced chives - 1 tsp
evaporated skim milk - 4 cup
unbleached white flour - 1/3 cup
Fresh ground pepper - pinch
1. Combine the mushrooms, sherry, onion, and broth in a stockpot over medium-high heat. Cook until mushrooms are browned, about 5 minutes.
2. Add the chives and cook for 2 minutes. Add 3 1/2 cups of the milk. Lower the heat and simmer for 5 minutes.
3. Combine the remaining 1/2 cup of milk and flour. Add to the soup, stirring until smooth and thick, about 4 minutes. Add the pepper and serve.
