Poached Pears with Orange Cream
Ingredients:
1 1/2 cup sugar
1/2 cinnamon stick
6 cloves
1 Tbs. vanilla extract
2 Tbs. lemon zest
1 quart water
4 bosc pears (peeled)
1/2 cup no fat sour cream
1 tsp. fresh grated orange peel
1 Tbs. granulated sugar
2 Tbs. Grand Marnier
Instructions:
Combine the sugar, cinnamon, vanilla extract, cloves and lemon zest in a large pot containing the quart of water.
Cook at a shiver over low heat for thirty minutes.
Cut a thin slice from the bottom of the peeled pear so that it will sit upright. Add the pears to the poaching water and heat to a shiver.
Poach for ten minutes more.
Allow the fruit to cool in the syrup and then place the pears in syrup in the 'fridge and chill thoroughly.
While the fruit is cooling mix together the sour cream, orange peel, sugar and Grand Mariner. Chill.
Serve the pear on a plate sitting upright and place a dollop of orange cream to the side. Garnish with orange slices.
