Default Chicken In Sesame Sauce

Chicken In Sesame Sauce
Serves/Makes: 4 | Difficulty Level: 3 | Ready In: 30-60 minutes

Ingredients:
1 pound boned chicken breast
1 tablespoon oil
4 ounces unsalted cashew nuts
3 ounces canned mushrooms

***Marinade:***
3 spring onions, chopped
3 tablespoons soy sauce
2 tablespoons each hot pepper oil and sesame seed oil
1 tablespoon sesame seed paste
1 tablespoon ground pepper

Directions:
Put the marinade ingredients in a bowl. Cut the chicken into cubes, then add to the marinade, turning to coat thoroughly. Leave to marinate for 30 minutes.

Meanwhile, heat the oil in a wok or frying pan, add the cashew nuts and fry until golden brown. Drain on kitchen paper. Add the chicken and marinade to the pan and stir-fry for 2-4 minutes. Drain the mushrooms, halve and add to the pan.

Cook for a further minute. Pile the mixture onto a warmed serving dish and sprinkle with the nuts.

Default yummy chicken

Yummy Chicken
2 cloves chopped garlic
olive oil
1 can cream of mushroom soup
splash of milk
1 can mushrooms
4 chicken breast -boneless skinless

heat oil, add garlic... inhale
brown chicken breasts on one side for 3-4 minutes
turn chicken
add cream of mushroom soup, milk and mushrooms
cook until chicken is cooked through
serve over rice

Default chicken curry

chicken curry

2 tbsp olive oil
1 tsp chilli powder
1 tsp chilli flakes
2 garlic cloves, peeled and crushed
1 tsp turmeric
1 tsp ginger
1 chicken breast, diced
½ onion, peeled and diced
2 tomatoes, diced
110ml/4fl oz double cream
1 lime, juiced
3 tbsp fresh coriander, chopped
2 tortillas, toasted



Method
1. Preheat a medium pan.
2. Heat the oil in the pan before adding the spices and frying for two minutes.
3. Add the chicken and sauté for two minutes.
4. Add the onion and tomatoes and leave curry to simmer for six minutes.
5. Pour in the cream and add the lime juice.
6. When the cream has heated through and reduced, remove the curry from the heat.
7. Add the coriander and stir well.
8. Transfer the curry to a large deep bowl and serve with the toasted tortilla

Chicken Cacciatore Soup (Pressure Cooker)

3 Pounds Chicken breast
1 Pound Zucchini chopped
1 Teaspoon Black pepper
2 Teaspoons Oregano
2 Bay leaves
2 Pints Stewed tomatoes
1 Large Onion, coarsely chopped
1/2 Teaspoon Salt
1 Teaspoon Crushed red pepper
4 Tablespoons Diced fresh parsley
1 Pound Bell pepper, coarsely chopped
2 Cloves garlic, minced
2 Cups White wine (don't buy in store; get a good brand)

Put whole chicken breasts in pressure cooker. Add remaining ingredients over the top. Bring to 15lbs. pressure over high heat. Turn heat down to medium and cook for 5 minutes. Release steam right away.

Remove chicken from the pot and shred with a fork. Return chicken to pot and serve!

Default chicken dish

chicken dish

1 whole cut up chicken
seasoned salt and pepper
4-6 cloves garlic, sliced
brown sugar
corn syrup

Place chicken in casserole. (doesn't have to be in single layer)
Season with salt and pepper to taste. Sprinkle with sliced garlic. Top
with brown sugar (quantity depends on how much sauce you want.
Drizzle with corn syrup. Cover tightly with foil and place in 300 degree
oven for 1 1/2 - 2 hours. Uncover, baste with juices and continue to
cook until done the way you like it. Serve chicken with juices over cooked rice. Enjoy.

Here's a family favorite, lite yet filling, and can be made to serve many. If you like rice dishes, this is a great one; most Hawaiians were raised with this at table!
CHICKEN HEKKA
1 ½ lbs. boneless, skinless chicken (white is good, but dark is best)
3/4 cup sugar
3/4 cup shoyu (+/- ½ cup Kikkoman’s Soy Sauce is best)
3/4 cup Mirin (Japanese sweet rice wine)
2 Tbs. oil (light vegetable Wesson, or, peanut oil)
2" ginger, grated
3 ea. medium carrots, julienne
2 ea. onions, sliced (medium)
3 stalks green onions, sliced 1"
1 can shredded bamboo shoots, drained (14 oz.)
1/2 lb. fresh mushrooms, sliced
1 bunch watercress, cut into 2" lengths
8 oz pkg. long rice, soaked & cut into 2" lengths

Slice chicken into serving pieces. Combine sugar, shoyu & mirin. In a skillet or wok, heat oil to medium high. Squeeze juice from grated ginger into wok. Add ginger & stir fry until brown, discard ginger fibers. Add chicken & stir fry over high heat. Add shoyu mixture & cook 2 more min. Add vegetables, one at a time, & stir fry after each addition, placing green onions last. Add long rice & cook 3 more min. or until done. Serve with steamed white rice; black pepper and Kikkoman Soy Sauce as condiments. The watercress & sweet teriyaki flavor makes this a “Hekka”.

Chicken Enchilada Casserole

1 lb chicken
1 small onion, diced
1 can chopped green chilis
1/4 cup diced jalapenos (can omit if desired)
1 can cream of chicken soup
1 can cream of celery or mushroom soup
corn tortillas
1 lb grated longhorn cheese

Poach chicken. Reserve 1/2 cup of chicken broth.

Saute onion, green chilis and jalapenos. Once tender, add soup and reserved broth. Cook on medium heat until soup is dissolved and water has mostly evaporated. Shred chicken and add to mixture.

Layer casserole starting with chicken/soup mixture. Top with a layer of tortillas followed by layer of cheese. Repeat same sequence ending with chicken/soup mixture. Bake in 350F oven for 45 to 60 minutes (or until it is bubbling).

Serve with a green salad.

Easy Parmesan Chicken

1/2 cup of Grated Parmesan Cheese
1 envelope Italian Seasoning Salad Dressing
1/2 tsp. Garlic Powder
6 boneless skinless chicken breasts (about 2lbs.)

Preheat oven to 400 degrees

1. Mix cheese, salad dressing seasoning and garlic powder in a bag...
2. Moisten chicken with water; coat with with cheese mixture. Place in shallow baking dish.
3. Bake 20-25 minutes or until cooked through.

Makes 6 servings.

Simply Chicken

2 Cans Campbell's Mushroom with Roasted Garlic Soup
2 Cans of whole milk (evaporated milk may be used but if want to cut richness use 1 can of of evaporated milk + 1 cup of water instead of 2 cans of whole milk)
4 chicken breasts pounded into flillets (makes them cook evenly)
Mrs. Dash or may use seasoning salt (lightly as soup has salt) pepper and granulated garlic

Sprinkle Mrs Dash or other seasoning listed on both sides. *Leave off salt if need to reduce salt or dont like too salty food*

Pour 2 cans Campbell's Mushroom with Roasted Garlic soup over the chicken breasts and cover cook 25-30 minutes at 3250. Sauce will be golden brown and is delicous over the chicken and with rolls as a gravy!

*** note - you may use mushroom soup and white wine for a different taste - just substitute 1 can of mushroom soup combined with 1 can of good quality white wine pour over chicken breasts and cook as above***

Party Chicken

14 drumsticks skin removed
3/4 c Apricot Jam
1/3 c Thousand Island Dressing
1/2 pkg. dry onion soup mix(make sure you stir the contents before dividing

Arrange chicken in a small roaster. Stir jam, dressing and soup mix in a bowl. Spoon over chicken, makeing sure that every piece has some. Bake at 350'F for 1 1/2 - 2 hrs. Makes about 1 1/2 cups of sauce. Serve with rice or mashed potaoes

For many who've heard of, here's the secret delite! Again from Hawaii, you may add to pleasance using pork cutlets as well. Enjoy Hawaii's super sit-down and take-out craze!

Chicken Katsu
2 lb chicken breasts – skinned and de-boned
1 teaspoon salt
½ cup flour
2 eggs, beaten
2 cups panko
1 quart salad oil for frying
1/3 cup ALOHA SHOYU Barbecue Sauce (your preference)
2 teaspoons catsup
1 ½ teaspoon Aloha Shoyu Regular Soy Sauce (or Lower Salt Soy Sauce)
1 ½ teaspoon sugar
pepper – a dash or to taste
hot pepper sauce – a dash or to taste
Note: Aloha Soy Sauce in not avail all over. Use Kikkoman’s regular or lite to your option
Rub chicken with salt. Dredge chicken in flour, dip in eggs, and coat with panko.
Pre-heat oil in skillet (about 375°). Fry chicken until golden brown; drain on absorbent paper.
Combine remaining ingredients in a separate bowl. Spoon sauce over chicken and serve with white rice.

This one came from Allrecipes and is wonderful.
1 tsp dried oregano
1/2 tsp salt
1/4 tsp ground black pepper
2 lbs skinless, boneless chicken halves
2 tablespoons butter
1/4 cup water
3 tablespoons fresh lemon juice
2 cloves minced garlic
1 tsp chicken bouillon granules
1 tsp chopped fresh parsley
In bowl mix oregano, salt and pepper. Rub mixture into chicken. Melt butter in skillet over med heat. ( do this part in my slow cooker since I can put over burner). Brown chicken . It will look beautiful. Mix water and lemon juice, garlic, & boullon and pour over chicken.
Cover and cook on high for 3 hrs or low 6 hrs. Add parsley to slow cooker 15 to 30 min before end of cook time. Enjoy

These are absolutely delicious. If you prefer milder sauce, reduce amount of hot sauce or omit altogether.

Anchor Bar Buffalo Wings
(The Original!!!)
Source: Ladies Home Journal - August 1991 - This is supposed to be the REAL Buffalo Wing recipe from the Anchor Bar in Buffalo, NY.
This makes enough for about 30 "wingettes."

Sauce

6 tbsps Louisiana Hot Sauce
1/4 cup (1/2 stick) margarine only (no butter)
1 tbsp white vinegar
1/8 tsp celery seed
1/8 to 1/4 tsp cayenne pepper
1/8 tsp garlic salt
Dash black pepper
1/4 tsp Worcestershire Sauce
1 to 2 tsps Tabasco sauce
Carrot and celery sticks
Marie's Bleu Cheese Dressing
30 Chicken wings

The Sauce:
Mix all the ingredients in a small sauce pan over low heat until the margarine is completely melted. Stir occasionally.
The Wings:
Fry the wings in a deep fryer set at 375 degrees F using vegetable or peanut oil. Fry 15 wings at a time for 12 to 15 minutes. Drain the wings for a few minutes then put them in a bowl. After all the wings have been fried, pour the sauce over them, cover the bowl, and shake to completely coat the wings. They can be eaten now, or you can put them on a baking sheet and bake them for a few minutes to get an extra-crispy coating. Serve with carrot and celery sticks and Marie's Bleu Cheese Dressing and cold beer (Genee Cream Ale is traditional).

Tried n True:
SAVOURY PAN-FRIED CHICKEN BREASTS

1/4 c. ground walnuts
½ c. flour
1/3 c. dry bread crumbs
1 egg
½ t. dried sage
2 T. milk
½ t. salt
4 skinless, boneless chicken breast halves
1/4 t. cayenne pepper
3 T. olive or vegetable oil
On a large plate, combine ground walnuts, bread crumbs, sage, salt and cayenne pepper. On another large plate, place flour. In a pie plate, bat egg with the 2 T. milk. Coat each chicken breast first with the flour, then the egg mixture, then the walnut mixture. In a large skillet, heat oil over moderately high heat. Add the chicken; cook until the chicken in golden brown on both sides, 3 to 4 minutes on each side. Transfer the chicken to a warm platter.
Makes 4 servings.

Chicken Noodle Casserole

4-5 split chicken breasts, boiled and meat removed (save water that chicken was boiled in)
1 package wide egg noodles
2 cans cream of mushroom soup
1 onion chopped
2 jars minced pimentos

After cooking chicken, bring water back to boil and cook egg noodles in the same water. Remove noodles, saving 1 cup of the water. Cut chicken into bite size pieces and mix with cooked noodles, mushroom soup, onion and pimentos. If mixture is dry, add a small amount of the saved cooking water. Add salt and pepper to taste. Spoon into a casserole dish and bake at 375 degrees for 30 min. Serve with a green salad and breadsticks.

Grilled Chicken Breasts with Whole-Grain Mustard Sauce

In a glass or ceramic bowl, mix marinade:
2 large shallots, minced (or 1/2 c. onion)
6 Tbsp whole grain mustard
1/2 c amber beer
1 tsp brown sugar
1 Tbsp olive oil
Salt and pepper to taste

Add 3 large boneless chicken breasts (with skin), and marinade 1 hour at room temperature. (Turn the breasts a few times while marinating.)

Place the chicken on the hot grill, skin side down, and cook for 4 minutes. Turn, baste with marinade, and cook 4 minutes on the second side. Baste, turn, and baste again, then cover the grill and cook 4 more minutes.

Move the chicken to a plate, cover with foil and keep warm.

Pour the leftover marinade into a saucepan, add 1/4 cup amber beer and 1/2 cup low-salt chicken broth and cook to reduce to a thick sauce.

Serve the chicken on a pool of sauce or pour the sauce over the chicken.

Chicken on a Beer Can

The simplest no-fail grilling recipe ever!

Rinse off whole chicken
Clean out cavity
Open can of beer
Set on grill (medium coals)
Place chicken on beer can (can is in the cavity holding chicken up)
Cover grill and cook one hour

Skin gets crispy brown, meat moist and tender.
Serve with your choice of side dishes...a good
salad and bread is my favorite!

Mix chicken and soups. Place in a greased 13 x 9 dish . Top with stuffing.
Pour melted margarine over the stuffing. Pour chicken broth over the dresssing and margarine enough to keep the mixture moist. Bake at 350 degrees until bubblling.

Not sure of extact measurements, but you should eyeball it.

1 bag of party wings
Bottle of Soy Sauce

I place the wings in a reusable aluminum pan. Cover the wings with soy sauce, let it marindate overnight if you can but at least 2 hours.

Please in a high heat oven until down.

I have put ginger & garlic in the marinade. I have had to adapt this to a salt free or so I use the less salt soy sauce.

This is great for parties.

Default Easy Chicken and Rice

Here is an easy chicken and rice recipe that I make all the time.

EASY CHICKEN AND RICE

1 can condensed cream of chicken/or cream of mushroom soup
1/2 cup water
1/2 cup orange juice*
1 cup uncooked rice
4 Boneless chicken breasts
1 Tbsp minced onions
1/2 teaspoon salt
1/4 teaspoon pepper

Mix soup, orange juice, and water in small bowl.

Pour uncooked rice into greased 9x13-inch pan. Add the liquid to the rice, mixing the rice and liquid - make sure that the rice mixture is spread out in the pan.

Place the chicken breasts on top of the rice mixture. Cover the top with the onions, salt, and pepper.

Cover with tin foil and bake for 1 hour at 350F.

*I have also made the same recipe with lemon juice but cut the amount of juice to 1/4 cup and increased the water to 3/4 cup.
