Banana Muffins

1 3/4 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 cup butter or margarine
1 1/4 cups white sugar
2 eggs
1/4 cup vanilla yogurt
1 cup mashed bananas

Put flour, soda and salt in a large bowl. Stir and make a well in the centre. In a second bowl, cream butter, sugar and eggs. Mix in yogurt and bananas. Pour into the first bowl and stir to moisten. Fill greased pans 3/4 full, and bake at 400 for 20-25 minutes. Makes 12 large muffins.

Cinnamon Orange Walnut Muffins

Another of Dennis Weaver's recipe's

Orange and walnuts make a wonderful combination in a morning muffin. This muffin recipe makes muffins that are light and cake-like and sure to be a hit with your family. We topped these muffins with a cinnamon and turbinado sugar topping for a touch more flavor and a delightful crunch. We think this will become a favorite family recipe.

Cinnamon Orange Walnut Muffin Recipe

Ingredients

2 1/4 cups all-purpose flour
3 tablespoons orange zest
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup butter
1 cup granulated sugar
1 teaspoon vanilla
2 large eggs
1/2 cup sour cream
1/2 cup orange juice
1 cup walnut pieces
2 tablespoons turbinado sugar.... (turbinado sugar is large crystal sugar made from the initial processing of sugar cane. Since it is less processed, it still contains some of the natural cane syrup. That's what gives it the attractive blond color and mellow, distinctive taste) If you can't find it....try Dennis Weaver's site...the preparedpantry.com Dennis sells it there)
1/2 teaspoon ground cinnamon

Directions

Preheat the oven to 375 degrees.
1. Mix the flour, zest, leaveners, cinnamon, and salt together in a medium bowl.
2. Cream the butter and granulated sugar together. Add the vanilla and then the eggs, beating after each. Beat until light and fluffy. Mix in the sour cream and orange juice.
3. Add the dry ingredients to the creamed mixture mixing only until combined. Add the walnuts.
4. Fill twelve well-greased muffin tins. Mix the turbinado sugar and 1/2 teaspoon cinnamon together in a small bowl or cup. Sprinkle over the batter in the muffin tins.
5. Bake for 20 to 25 minutes or until done. Remove the muffins to a wire rack to cool.

Default BLT Muffins

BLT Muffins

These muffins are delicious. These are great for a snack, appetizer, bake sale, or food gift. Really good served with cream cheese also.

2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1 cup milk
1/2 cup mayonnaise (DO NOT subsitute with light or fat free mayo)
3/4 cup cooked, crumbled bacon, , , about 12 strips
1/2 cup chopped, seeded plum tomatoes
2 tablespoons minced fresh parsley

Makes: 1 dozen regular size muffins
45 minutes (approx.) ... 20 mins prep

In a large bowl, combine flour, baking powder, and sugar.
In another bowl, beat milk and mayonnaise until smooth.
Stir into the dry ingredients just until moistened.
Fold in the bacon, tomatoes, and parsley.
Fill greased or paper-lined muffin or mini muffin cups 2/3 full.
Bake at 400 degrees for 20 to 25 minutes or until a toothpick inserted comes out clean.
Cool for 5 minutes before removing from pan to a wire rack.
Serve warm.

Default Mango Muffins

Mango Muffins

2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar or 3/4 cup honey
1/4 cup vegetable oil
1 cup milk
1 egg
1-1 1/2 cup mangoes, pulp of (2 very ripe Mangos)

Makes: 18 muffins
33 minutes total ( approx.) ... 15 mins prep

Cut and peel two very ripe (soft to the touch) Mangos and reduce to soft pulp and juice. Combine flour, baking powder, salt and sugar in a large bowl.
In a seperate bowl combine oil, milk, and egg.
Mix liquid ingredients with dry until just moist and stir in the Mango pulp.
Fill greased muffin tins, or paper muffin cups two-thirds full.
Bake at 400 degrees (F) for 15-18 minutes.
They are done when they are brown on top and a tooth-pick inserted into the center comes out clean.

Default English Muffins

English Muffins

Far better than any English muffins you can buy in the store, and much less expensive, too.

1 envelope yeast
1 1/2 teaspoons salt
1/2 cup milk, lukewarm
1 egg
2 tablespoons sugar
4 1/2-5 cups flour
1 cup milk
1/2 cup yellow cornmeal
1/4 cup butter
2 tablespoons butter, melted

Makes:20 muffins
2 hours 25 minutes total 9approx.) ... 50 mins prep

Since you cook these on top of the stove, there is no need to preheat the oven.Proof the yeast in the l/2 Cup of lukewarm milk with the sugar.Scald the 1 cup of milk, melt the butter in it and let cool to lukewarm.
Add the salt and the slightly beaten egg to the milk-and-butter mixture. Pour the yeast sponge into a large mixing bowl and blend in the milk-butter-and-egg mixture. Add the flour, a little at a time,mixing together well.
Turn the dough out onto a lightly floured work surface and knead, adding more flour if necessary.
Knead until elastic and shiny.
Then place the dough in a large buttered bowl, cover with a towel and let rise for at least 1 hour, until doubled in bulk.
Meanwhile, pour the cornmeal onto a platter and set aside. Take the dough out onto the work surface and knead again for a couple of minutes.
Roll it out with a rolling pin to a thickness of about 1/3" and, with a glass or a large biscuit cutter, cut out round cakes.
Put these onto the platter with the cornmeal, press down slightly and turn to get the other side covered with cornmeal.
Place on a baking sheet and cover with a towel.
Let stand for about 20 to 30 minutes or until doubled in size. Place a skillet over medium heat and when hot, brush with a little melted butter, turn the heat low and place about 5 to 6 muffins in the pan.
Cook for approximately 5 minutes on each side, or until they are slightly brown.
Cool on a rack.
Toast after they are completely cooled off and right before serving them.

2 teaspoons baking powder
2 1/4 cups flour, unbleached
1/4 cup almonds, ground
1 tablespoon orange rind, grated
1/4 cup raisins, if desired

Makes: 18 muffins

Cream butter and sugar.
Beat in eggs, rum, vanilla, and milk.
Mix cinnamon, baking powder, and flour.
Add flour mixture to butter mixture.
Gently mix in almonds, orange rind, and raisins.
Pour batter into greased muffin tins, filling half full.
Bake at 375 degrees F. for 25 to 30 minutes, or until browned.

2 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1 pinch salt
1/4 cup butter
2 eggs
1/4 cup milk
1/2 cup amaretto liqueur
1/2 cup sliced or chopped almonds

Makes: 12 muffins
35 minutes total (approx.) ... 10 mins prep


Preheat oven to 400°F.
Grease muffin tins.
Combine flour, sugar, baking powder and salt.
Cut in butter until mixture resembles coarse crumbs.
In a second bowl, combine eggs, milk, Amaretto and almonds.
Add to dry ingredients, stir until mixture is just moistened; batter will look rough not smooth, do not overmix.
Spoon into muffins tins, about 3/4 full.
Bake 20-25 minutes of until golden brown.
Remove from tins and place on wire rack.

Blackberry muffins

If you freeze berries this is a great way to have that just picked goodness in the dead of winter
1/2 cup milk
3/4 cup vegetable oil
1 beaten egg
2/3 cup brown sugar
1 cup white flour
1 cup whole-wheat flour
3 teaspoons baking powder
1 cup frozen blackberries (frozen, they're easier to work with)

Makes: 4-6 servings
35 minutes total (approx.) ... 5 mins prep

Mix together dry ingredients in large bowl.
Toss blackberries in dry ingredients til flour coated.
Mix together liquid ingredients.
Pour wet ingredients into dry and mix just til moist.
Spoon batter into jumbo muffin cups (ungreased).
Bake at 350 for 25-30 minutes .

Hot Buttered Rum Muffins

Ingredients:
1/2 cup butter or margarine, softened
1/2 cup sugar
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/2 cup milk
5 tablespoons rum, divided
3 tablespoons sugar

Makes: 1 dozen
50 minutes total (approx.) ... 25 mins prep

Beat butter at medium speed with an electric mixer until creamy.
Add 1/2 cup sugar, beating well.
Add eggs, one at a time, beating just until blended after each addition.
Combine flour and next 4 ingredients.
Combine milk and 3 tablespoons rum.
Add flour mixture to butter mixture alternately with milk mixture, beginning and ending with flour mixture.
Beat at low speed until blended after each addition.
Spoon into greased muffin pans, filling 3/4 full.
Bake at 375 degrees for 20-25 minutes or until golden.
Remove from pans immediately; place on wire racks.
Combine remaining 2 tablespoons rum and 3 tablespoons sugar in a small saucepan; cook over low heat, stirring constantly, until sugar dissolves.
Brush over warm muffins.

These are wonderful for just throwing in your favorite ingredients---You just might not want any other muffin recipe! Being so versatile is what makes them great.

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1 cup milk
1/4 cup vegetable oil

Makes: 12 muffins
35 minutes total (approx.) ... 10 mins prep

Preheat oven to 400 degrees F (205 degrees C).
Stir together the flour, baking powder, salt and sugar in a large bowl.
Make a well in the center.
In a small bowl or 2 cup measuring cup, beat egg with a fork.
Stir in milk and oil.
Pour all at once into the well in the flour mixture.
Mix quickly and lightly with a fork until moistened, but do not beat.
The batter will be lumpy.
Pour the batter into paper lined muffin pan cups.
Variations: Blueberry Muffins: Add 1 cup fresh blueberries.
Raisin Muffins: Add 1 cup finely chopped raisins.
Date Muffins: Add 1 cup finely chopped dates.
Cheese Muffins: Fold in 1 cup grated sharp yellow cheese.
Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.
Bake for 25 minutes, or until golden.

Kahlua Muffins

This is an awesome recipe that fills the house with a wonderful aroma while baking and be warned, you won't be able to eat just one!

1 box yellow cake mix
1 (3 ounce) box vanilla instant pudding mix
4 eggs
1 cup sour cream
1 cup vegetable oil
1 cup chopped pecans
1 cup brown sugar
3/4 cup Kahlua

Makes: 18 muffins
30 minutes total (approx.) ... 10 mins prep

In a small bowl combine pecans, brown sugar and Kahlua.
Let sit until needed.
In a large bowl,and I do mean large, combine the cake mix, pudding mix, vegetable oil and sour cream, and mix on low speed until moistened.
Add the eggs, one at a time and mix well after each.
Beat for 2 minutes on medium speed, the mixture will be very thick, don't panic.
Slowly mix in the pecan mixture, until well mixed.
Pour into very well greased muffin cups, (see note below.)
Bake at 350 for 15 to 20 minutes, or until toothpick comes out clean.
Pop out of pan and cool on rack, if you can wait that long to eat one.

NOTE: Make sure you use well greased muffin tins, if you're using non-stick pans.
If they stick, you did not grease enough.
Just run a spatuala around the edge to release.
I noted these make 18 regular size muffins.
These do not rise a lot so you can fill 2/3 way full without spill over.

Triberry Muffins

Blueberries, strawberries and raspberries!

Ingredients:
3 cups unbleached flour
2 cups sugar, divided
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3-4 teaspoons ground cinnamon (more or less to taste)
1 1/4 cups milk
2 large eggs
1 cup unsalted butter, melted
1 cup blueberries
1/2 cup diced strawberries
1/2 cup raspberries

Makes: 20 muffins
30 minutes total (approx.) ... 10 mins prep

Preheat oven to 375 degrees.
Place paper liners in muffin tins or grease.
In a large bowl combine the flour, 1 1/2 cups sugar, baking powder, baking soda, salt and cinnamon.
Mix together the milk and eggs.
Make a well in the center of the flour mixture and pour the milk and egg mixture into the well along with the melted butter.
Stir quickly just to combine.
Gently fold in berries.
Spoon the batter into the cups, filling each one almost to the top.
Sprinkle remaining 1/2 cup of sugar on top of each muffin.
Bake about 20 minutes, until brown and crusty.

Pecan pie muffins

These are a small heavy muffins, they dont rise much, so dont think you have done something wrong! These are so tasty and great with coffee.

1 cup pecan halves
1 cup packed brown sugar
1/2 cup flour
2 large eggs
1/2 cup butter, melted
1/4 teaspoon vanilla

35 minutes total (approx.) ... 15 mins prep

mix first 3 ingred in bowl.
make a well in center.
beat eggs till foamy, stir butter and vanilla in with eggs.
add to dry ingredients.
stir just till moist... place in greased muffin cups, 2/3 full.
bake 350 degrees for 20-25 minutes.

Gingerbread Muffins

Make up this batter and keep it in the refrigerator for up to 2 weeks to bake as you need muffins. These are excellent and so easy.


3 eggs
1 cup molasses
1 cup brown sugar
3 1/2 cups flour
1 tablespoon baking soda
1 tablespoon ground cloves
1 tablespoon ground ginger
1/2 lb butter, melted
1 cup hot water

Makes: 36 muffins
35 minutes total (approx.) 15 mins prep

Combine all ingredients in a large bowl and refrigerate until ready to use.
Bake in paper lined muffin tins at 350 degrees for 20 to 25 minutes.
Batter will keep for 2 weeks in refrigerator.

Campfire Muffins

Simple and fun Muffins for the younger ones to do around the fire.

Ingredients:
6 oranges
2 (7 ounce) packages blueberry muffin mix (or any flavor)

Makes: 12 servings
20 minutes total (approx.) ... 10 mins prep

Cut oranges in half.
Scoop out the orange segments to eat alone.
Reserve the hollow peel shells.
Prepare the muffin mix according to the package directions.
Fill the orange peel cups half full of batter.
Wrap each one loosely with heavy duty aluminum foil.
Place in hot coals, making sure that the batter side stays up.
Cook 6-10 minutes until muffins are done.
Adding a few berries to the batter adds excellent flavor.

Note: Use 3 oranges per package of muffin mix.

These have a wonderful flavor if you can get past the green cooked kiwi.

Ingredients:
2 cups flour
1 tablespoon baking powder
3/4 teaspoon salt
1/3 cup sugar
1/4 teaspoon cinnamon
1 egg, slightly beaten
1 cup milk
1/4 cup oil
2/3 cup chopped and peeled kiwi fruits

Makes:12 muffins
30 minutes total (approx.) ... 10 mins prep

Preheat oven to 400 degrees.
Mix all dry ingredients in a large bowl.
Mix egg, milk and oil.
Add wet mixture to the dry mixture stirring just until moistened.
Add kiwis, stir just until blended.
Spoon batter into 12 lined muffin cups, filling 3/4 full.
Bake for 20 minutes.
Insert toothpick; if it comes out clean.....turn muffins out to cool...and your ready to enjoy

1 cup mandarin oranges in juice
1 tablespoon orange extract
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg, beaten
8 ounces sour cream
1/3 cup butter, melted
1/2 cup pecans, chopped

Makes: 18 servings
40 minutes total 9approx.) ... 20 mins prep

Preheat oven to 400 degrees F,.
Line the muffin pans with paper liners.
Drain the mandarins reserving liquid.
Add the orange extract and enough water to make 1 cup of liquid.
In a large bowl, combine the flour, baking powder, baking soda, salt, brown and white sugars.
In a separate bowl, combine the egg, sour cream, orange liquid and the butter.
Add to dry ingredients with oranges and pecans.
Stir just until moistened.
Fill lined muffin cups 2/3 full.
Bake for 20-25 mnutes.

Key Lime Muffins

Try something different for breakfast or with your afternoon cup of tea/coffee. Fresh Key Lime Juice works the best.

2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup milk
2 large eggs, lightly beaten
1/4 cup vegetable oil
1 teaspoon grated lime rind
1/4 cup key lime juice (don't substitute)

Makes: 12 servings
53 minutes total (approx.) ... 35 mins prep

Add the first 4 ingredients to a mixing bowl; stir to combine.
Make a well in the center of the mixture.
In another mixing bowl, combine the milk and remaining ingredients.
Add liquid ingredients to dry ingredients; stir until just moistened.
Spoon batter into lightly greased muffin cups; fill 3/4s full.
Bake at 400° for 18 minutes or until lightly browned.
Turn muffins out of pan immediately.

Beer Muffins

You can add cheese and garlic if you want.

1 cup Bisquick
1 tablespoon sugar
4 ounces beer

makes: 6 servings
25 minutes total (approx.) ... 5 mins prep

Mix together and spoon into greased muffin tins.
Bake at 400 deg for 20 minute.
I don't think we need to cover what to do with used beer!

Rainbow Muffins

A colorful treat to brighten up your dinner table or provide a healthy snack.

Ingredients:
1 3/4 cups unbleached flour
1/4 cup granulated sugar
1 tablespoon baking powder
2 tablespoons margarine, melted
1 whole egg, slightly beaten
1 cup water
1 1/2 cups Fruit Loops cereal, Trix cereal or Fruity Pebals, broken into small pieces but not crushed (you can leave the Trix as is)
1/2 cup Fruit Loops cereal or trix cereal, crushed

Makes: 12 servings
30 minutes total (approx.) ... 10 mins prep

Preheat oven to 400°F Prepare 12 standard muffin cups; set aside.
In a mixing bowl, combine flour, sugar, and baking powder.
Add margarine, egg, water, and 1.5 cups cereal. Mix until moistened.
Fill each muffin cup with 1/3 cup of batter.
Sprinkle crushed cereal on top.
Bake for 20 minutes, or until toothpick inserted in the center comes out clean.

Ingredients:
2 cups flour

1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup pecans, Chopped
1 large egg
1/4 cup vegetable oil
2 teaspoons orange rind, Grated
3/4 cup orange juice
1 1/4 cups rhubarb, fresh fine chopped

Makes: 12 servings

Combine all dry ingredients.
Beat egg and oil; add orange juice.
Add to flour mix.
Add rhubarb.
Bake 350F 25-30 min.

1 cup molasses
1 cup buttermilk or sour milk
1 cup raisins

Makes: 12 servings
35 minutes total (approx.) ... 15 mins prep

Sift together flour, baking soda, salt, cinnamon, ginger, cloves, allspice and nutmeg; set aside.
Cream together shortening and sugar in mixing bowl until light anf fluffy, using electric mixer at medium speed.
Add eggs beat well.
Blend in molasses and buttermilk or sour milk.
Add dry ingredients all at once, stirring just enough to moisten.
Stir in raisins.
Spoon into greased 3-inch muffin-pan cups, filling 1/2 full.
Bake in 350 degree oven 20 minutes or until golden brown.
Serve hot with butter and jam.

NOTE:.
Batter can be stored in refrigerator in covered container for up to 3 weeks. Be certain to test with toothpick before removing from oven.

Cherries and Cream Muffins

Bake these muffins and make mouths water.

Ingredients:

2 1/2 cups frozen unsweetened tart red cherries
1/2 cup butter or margarine
1 cup granulated sugar
2 eggs
1 teaspoon almond extract
1/2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup light cream or half-and-half or milk
granulated sugar

Makes:12 servings
45 minutes total (approx.) ... 15 mins prep

Cut cherries in halves while frozen.
Set aside to thaw and drain.
In a large mixing bowl, beat butter and sugar until light and fluffy.
Add eggs, almond extract and vanilla, beating well.
Crush 1/2 cup cherries with a fork; add to batter.
Combine flour, baking powder and salt.
Fold in half the flour with a spatula, then half the cream.
Add remaining flour and cream.
Fold in remaining cherry halves.
Portion batter evenly into 12 paper-lined or lightly greased muffin cups (2 3/4 inches in diameter).
Sprinkle with sugar.
Bake in a preheated 375º oven 20 to 30 minutes, or until golden brown.

Easy gourmet flavored muffins -

Ingredients:

2 cups baking mix (Bisquick)

2 tablespoons vegetable oil

1 cup grated swiss cheese or gruyere cheese (4oz)
2 teaspoons chopped fresh chives

Makes: 12 muffins
35 minutes total (approx.) ... 15 mins prep

Preheat oven to 400°F.
In a medium bowl, combine baking mix, wine, oil and egg.
Using a fork, beat the mixture for 30 strokes.
Stir in the cheeses and chives.
Divide the mixture between 12 (2 1/2 x 1 3/4 inch).
muffin cups, greased or lined with paper cups.
Bake 15-20 minutes or until a toothpick inserted in the center comes out clean.

These scrumptious muffins are not exactly the healthiest of choices...but go ahead and induge yourself!


Muffins
1/3 cup butter
1/2 cup sugar
1 egg
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup milk

Topping
1/2 cup sugar
1 teaspoon cinnamon
1/2 cup butter, melted

Makes: 12 Muffins
35 minutes total (approx.) ... 10 mins prep

Preheat oven to 350 and grease muffin pans.
Mix thoroughly butter, sugar, and egg.
Stir in flour, baking powder, salt, and nutmeg.
Add in milk and stir.
Fill muffin pan to about 2/3 full.
Bake for 20-25 minutes or until golden brown.

While muffins are baking, mix coating sugar and cinnamon.
Immediatley after baking, roll muffins in melted butter and then in sugar and cinnamon mixture. STICKY !
Serve hot.

1 (18 1/4 ounce) box yellow cake mix or butter recipe cake mix
1 teaspoon coconut extract
1 teaspoon rum extract
1 cup flaked coconut
1/2-1 cup nuts, chopped
1 (8 ounce) can undrained crushed pineapple

Makes: 18 Muffins
25 minutes total (approx.) ... 5 mins prep

Prepare cake mix following package instructions.
Add other ingredients.
Mix 1 minute- don't over-mix.
Grease muffin tins and fill 3/4 full.
Bake at 350ºF for 15-20 minutes.

½ cup strained honey
¼ cup sugar
1-1/4 cups milk
¼ cup melted butter


Sift first 4 ingredients together. Stir in bran and raisins.

Beat egg well; add honey, sugar, milk and melted butter.

Add to dry ingredients and nuts, stirring only enough to dampen all the flour.

Fill greased muffin pans about 2/3 fill and bake in hot oven (400 F) for 25 minutes. Makes 16 to 18

Place in greased muffin pans and bake in moderate oven (375F) for 35 minutes. Makes 6

Topping: l/3 cup chopped pecans
3 T brown sugar
l T light sour cream (Mix altogether)
l small ripe banana
l egg
l l/2 cups any kind complet pancake mix
l/2 cup sugar
2 T oil
Mash banana, add rest of ingredients just to mix, don't overdo it. Fill pam sprayed muffin cups or paper lined nearly full. Put topping incenter of each muffin and bake 400 degrees about 18 to 20 minutes

These are so easy and delicious you wouldn't believe it...Try 'em.

l egg lightly beaten
6 T milk
5 T oleo melted
5 tsp honey
l/2 tsp vanilla
l cup any brand pancake complete mix
l/4 cup nuts
l/4 cup raisins
l/4 cup chopped dried apricots

Mix wet ingredients together, add pancake mix to just mix (don't overmix)
fold in fruit and nuts. Bake 350 about 20 minutes.

Icing for top: l/2 cup confectioners sugar
l tsp honey
dash of cloves
2 tsp milk

Drizzle over top of muffins

1 Cup Chopped Walnuts

In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. Mix oil, eggs and vanilla and stir into dry ingredients. Fold in apples, raisins, coconut, carrots and nuts. Fill greased or paper-lined muffin cups 2/3 full. Bake at 350 degrees for 25 to 30 minutes or until muffins test done. Makes about 3 dozen.

IRISH COFFEE MUFFINS

2 Cups Flour
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1/3 Cup Sugar
1 Tablespoon Instant Coffee Granules
2 Tablespoons Coffee Liqueur
2 Tablespoons Irish Whiskey
Milk
1 Egg
1/2 Cup (8 Tablespoons) Melted Butter Or Margarine

Line 12 muffin-tin cups with paper liners. Preheat oven to 375 degrees.

In a bowl, combine flour, baking powder, salt and sugar. Stir well.

In a 1-cup measure, dissolve coffee granules in coffee liqueur and whiskey. Add enough milk to measure 1 cup. Whisk egg in a bowl with coffee-milk mixture. Whisk in melted butter.

Gently stir liquid into dry ingredients just until moistened. Spoon into muffin tin. Bake at 375 degrees for 25 minutes, or until the top springs back when gently touched. Makes 1 dozen.

QUICHE LORRAINE MUFFINS
Muffins aren't just for breakfast. These can be served with salad and a glass of wine for a great fall supper or picnic.

Vegetable Oil Spray Or Paper Muffin Cups
1/4 Cup Canola Or Vegetable Oil
6 Strips Thick-Cut Bacon Or 8 Thin Strips Bacon, Roughly Chopped
4 Medium Scallions, Thinly Sliced
2 Cups All-Purposes Flour
1/2 Cup Yellow Or White Cornmeal
1 Tablespoon Baking Powder
1 Tablespoon Sugar
1/2 Teaspoon Salt
1 Large Egg, At Room Temperature
2 Large Egg Yolks, At Room Temperature
1 Cup Whole Milk
1 1/4 Cups Shredded Gruyre (5 Ounces)

Position rack in center of oven and preheat to 400 degrees. To prepare muffin tins, spray with vegetable oil spray or line with paper muffin cups.

Heat a medium skillet over medium heat. Swirl in 1 tablespoon oil, then add bacon; sauté 1 minute. Add scallions; cook 2 minutes, stirring occasionally, until scallions are wilted and the bacon lightly browned. Transfer contents of skillet to large bowl; cool 10 minutes.

Meanwhile, whisk flour, cornmeal, baking powder, sugar and salt in a medium bowl, until well blended. Set aside.

Whisk egg, egg yolks and remaining oil into bowl with bacon. Stir in milk and cheese until well incorporated. Finally, stir in prepared flour mixture until moistened.

Fill prepared tins three-quarters full. Bake for 18 minutes or until muffins are lightly browned and a toothpick inserted in center of one muffin comes out with a few moist crumbs attached.

Set pan on wire rack to cool for 10 minutes. Remove from muffin tin and allow to cool for 5 more minutes on rack before serving. Makes 12 servings.

CHILE, CORN AND CHEESE MUFFINS

1 Cup Frozen White Corn Kernels, Thawed
1 Cup Coarsely Shredded Cheddar Cheese
1 Cup Coarsely Shredded Monterey Jack Cheese
1 Cup Unbleached Flour, Plus Extra As Needed
1 1/4 Cups Fine Or Medium Grind Yellow Cornmeal
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1/2 Cup Unsalted Butter Or Margarine, Softened
3/4 Cup Sugar
4 Large Eggs
1/2 Cup Milk
1 4-Ounce Can Diced Roasted Green Chiles, Drained

Preheat the oven to 375 degrees. Grease the 12 cups of a muffin tin.

In medium bowl, combine the corn, cheese, flour, cornmeal, baking powder and salt. With an electric mixer, cream butter and sugar together until fluffy. Add eggs, milk and chiles, beating until well blended. Add the corn-flour mixture. Beat well to make a thick, creamy batter that falls off the spoon in clumps. Add an additional 2 to 4 tablespoons of flour if the batter is still too loose.

Spoon the batter into the prepared muffin tin, filling each cup to the top. Bake until golden and the tops are dry and springy to the touch, 20 to 25 minutes. Let cool for 5 minutes before removing to cool on a rack. Serve warm.

Pineapple Muffins

1 8 oz can crushed Pineapple
1/2 cup all-purpose flour
1/3 cup firmly packed brown sugar
1/4 tsp ground cinnamon
1/2 cup melted butter (divided)
2 cups all-purpose flour
1/2 cup sugar
1 TBSP baking powder
1/2 tsp salt
1 egg
3/4 cup milk

Drain pineapple, reserving 1/4 cup of juice.

Combine 1/2 cup flour, brown sugar, cinnamon, and 1/4 cup butter; Stir well.

Combine next 4 ingredients.

Combine egg, milk, remaining 1/4 cup butter and reserved pineapple juice; Stir well.

Make a well in the center of dry ingredients; add liquid ingredients. Stirring just until moistened.

Spoon batter into greased and floured muffin pans, filling 1/2 full. Spoon pineapple over batter and sprinkle with cnnamon mixture. Bake at 375 degrees for 30 minutes. yeilds 16 muffins

Note* If you you have more muffin cups than you need just add water to those that are empty. This will help keep grease from baking on.

Default Grist Mill Natural Bran Muffins

This is the recipe that used to be on the boxes of Grist Mill Natural Bran. I have not been able to locate the Grist Mill brand for many years. This is a great recipe! (Address on box: Grist Mill Co., Lakeville, MN 55044)

3 cups Natural Bran (or Nabisco 100% Bran)
1 cup boiling water
1/2 cup vegetable oil (I use 1/4 cup vegetable oil and 1/4 cup Extra Virgin Olive Oil)
2 eggs (I use liquid egg substitute sometimes)
2 1/2 cups unsifted all-purpose flour
1 1/2 cup sugar
2 1/2 teaspoons baking soda
2 cups sour milk (1 1/2 Tablespoons of cider vinegar & skim milk to make 2 cups)

Combine bran cereal and boiling water in large mixing bowl. Let stand 5 mins. Beat in oil and eggs. Stir in remaining ingredients until well-mixed.

Fill ungreased muffin cups 3/4 full (Cover remaining batter and refrigerate for up to a week). Bake in preheated 400F. degree oven for 18 to 20 minutes or until the top springs back when lightly touched.

Makes 30 to 36 muffins.
