what do you do with cake mixes, besides followig the directions in the box? Lets see them creative recipes....

For something a little different, I like to make cookies from cake mixes.

Apricot Almond Squares

1 (18.25 oz) box yellow cake mix with pudding
8 Tbsp (1 stick) butter, melted
1/2 cup finely chopped almonds (with or without skins/blanched)
1 1/3 cups apricot preserves
8 ounces cream cheese, room temp
1/4 cup sugar
2 Tbsp all-purpose flour
1/2 teaspoon pure almond extract
1 large egg

Place a rack in the center of the oven and preheat to 350 degrees F. Set aside an ungreased 13 x 9-inch baking pan.

Place cake mix, butter, and almonds in a large mixing bowl. Blend with an electric mixer on low speed for 1 1/2 minutes. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Mixture should be crumbly. Reserve 1 cup for topping. Transfer the remaining crust mixture to the pan. Using fingertips, press the mixture evenly over the bottom of the pan so that it reaches all sides. Spread the preserves over the crust. Set aside.

For the filling, place the cream cheese in the same mixing bowl used to prepare the crust, and blend with an electric mixer on low speed until creamy, 30 seconds. Stop the machine and add the sugar, flour, almond extract, and egg. Beat on low speed until well combined, 1 to 2 minutes. Use rubber spatula to spread the filling over the preserves so that it covers entire surface. Scatter reserved crust mixture over the preserves.

Bake the cake until the crust is golden brown and the filling is set, 33 to 35 minutes. Remove the pan from the oven and place it on a wire rack to cool for 30 minutes.

Cut the cake into 24 bars. Remove the bars from the pan with a metal spatula and serve.

NOTE: Store these bars, covered in plastic wrap, at room temperature for up to 4 days or in the refrigerator for up to 1 week. Or freeze them, wrapped in aluminum foil, for up to 6 months. Thaw the bars overnight in the refrigerator before serving.

Easy Cookies from a Cake Mix


OLD FASHIONED OATMEAL COOKIES
1 pkg. Duncan Hines spice cake mix
2 1/2 c. uncooked rolled oats
2 eggs
3/4 c. cooking oil
1/2 c. milk
1 c. raisins
1 c. chopped nuts
1/4 c. dark brown sugar

Combine all ingredients and mix well. Drop from a teaspoon onto an ungreased cookie sheet. Bake at 350 degrees for about 12 minutes.

Sock It To Me Cake
1 butter recipe cake mix 1 c. sour cream 4 eggs 1/2 c. sugar 2/3 c. vegetable oil 1 c. nuts 1 t. vanilla
Mix until well blended. Pour 1/2 batter in greased and floured bundt pan.
Sprinkle over batter : 1 t. cinnamon 2 T. brown sugar
Pour other half batter over top. Bake 50 minutes at 350.

Pineapple Cherry Dump Cake
1 box yellow cake mix 1 stick butter 1 20 oz. can crushed pineapple i juice 1 can cherry pie filling
Preheat oven to 350. Grease a 9x13 pan. Dump half the cake mix in the pan and spread evenly. Dump pineapple with juice over cake mix and spread out evenly. Spread pie filling over pineapple. Dump the rest of the cake mix over top and spread out. Slice butter over top of cake mix. Bake 50 minutes. Serve warm with ice cream or whipped topping.

Apple Streusel
Batter :1 yellow cake mix 2 large eggs 1/2 t. lemon extract 1 can apple pie filling

Topping: 1/4 c. butter melted 1/2 c. sugar 1/2 c. flour 1/2 t. cinnamon
Preheat oven to 350. Mix together batter ingredients. Pour into a greased 13x9 inch pan. Prepare topping ingredients by mixing with a fork until crumbly. Spread over batter. Bake 45 minutes.

Lazy Peach Cobbler
1 yellow cake mix 1 29 oz. can sliced peaches with juice 1 stick butter
Preheat oven to 350. Grease a 13 x 9 inch pan. Spread half of dry cake mix evenly in pan.Pour peaches over top, evenly. Cover with the rest of the cake mix. Slice butter over top. Bake 50 minutes or until golden brown. Wonderful warm with a scoop of ice cream.

Strawberry Decadence Cake

1 french vanilla or strawberry cake mix 2 10 oz. bags sliced strawberries thawed and sweetened to taste ( I use 1 cup of sugar ). 1 smallbox french vanilla or cheese cake flavor pudding mix 8 oz. whipped topping fresh strawberries for garnish if desired

Bake cake according to pkg. directions in a 9x13 pan. Cool. Poke holes in cake. The handle of a wooden spoon works well. Pour the strawberries over cakeand spread out so berries and juice seep into holes. Prepare pudding according to box directions, smooth over berries. Ice cake with whipped topping garnish with strawberries if desired. Refrigerate several hrs. for best flavor.
I have made this dessert many times and I am always asked for the recipe. No one believes that a dessert this good and attractive is so easy to make!

Very Banana Nut Bread
2 bananas mashed 1 banana cake mix 1 small box banana pudding mix 3 eggs 1/4 c. vegetable oil 1/4 c. applesauce 1 t. cinnamon 1/2 c. water 1 c. chopped nuts
Heat oven to 350. Blend all ingredients until smooth. Fill 2 greased bread pans 3/4 full. Bake 30 minutes or until a toothpick comes out clean.
