Default Ham recipes

Baked Smoked Ham


5 lb To 8 ham
1 Carrot; sliced
1 Onion; peeled
1 sm Bay leaf
Prepared mustard
1/3 c Whole cloves
1 c Brown sugar
1 c Fine bread crumbs
Vinegar

Wipe ham with a damp cloth. Put in a large kettle,
add carrot, onion and bay leaf; cover with water.
Bring to a boil and simmer until tender. Let ham
cool in water it was cooked in. Remove ham rind
and score the fat with criss-crosses. Spread with
mustard and stick cloves in score marks. Mix
together the sugar and crumbs with a little
vinegar - press this in a thick layer all over the
ham. Bake slowly to brown.

Glazed Ham Balls

Yield: 48 Servings

1 Beaten eggs
3/4 c Soft bread crumbs (1 slice)
1/3 c Dried tart red cherries or
.. dried cranberries finely
.. snipped
1/4 c Finely chopped green onion
1/4 ts Pepper
1/2 lb Ground fully cooked ham
1/2 lb Lean ground beef
2/3 c Red currant jelly
2 tb Prepared mustard
Green onion slivers

Combine all ingredients except jelly, mustard and
green onion slivers. Form into 1" balls.

Bake at 350°. on a jelly roll pan 15-18 minutes or
until done; drain if needed.

Heat jelly and mustard together until jelly melts.
Stir in ham balls; keep warm. Garnish with green
onion slivers.

Ham Barbecue


1 tb Vegetable oil
1 c Chopped sweet green pepper
1 c Chopped onion
1/2 c Ketchup
1/3 c Sweet pickle relish
1/4 c Cider vinegar
2 tb Sugar
1 ts Dry mustard
1 lb Thinly sliced baked ham
6 Sandwich rolls; split

1. To make barbecue sauce, in large skillet over
mdium heat, heat oil. Add pepper and onion, saute
until lightly browned, 5 to 7 minutes. Stir in
ketchup, relish, vinegar, sugar and mustard. Heat
mixture just to boiling; reduce heat to low and
cook 5 minutes.

2. Stir ham into sauce; return to boiling. Remove
from heat and divide among rolls. Serve
immediately.

Ham Slice with Curried Fruit


1 sl Ham; 1" thick
1/2 c Brown sugar
1 c Fine bread crumbs
3 tb Water
Salt and pepper
2 ts Mustard

MMMMM-----------------------CURRIED FRUIT-------------
Canned peaches pears
.. and/or apricots
Sliced canned pineapple
1/2 c Butter; melted
1 c Brown sugar
1 tb Curry powder

Ham:

Trim fat off ham. Chop fat, mix with other
ingredients. Wipe ham with a damp cloth. Put into
a baking dish and cover with the crumb mixture.
Bake 1 hour at 375° and baste 3 to 4 times. While
ham is in oven, make curried fruit.

Curried Fruit:

Drain fruits and put as much as will fit into a
deep baking dish. Mix butter with sugar and curry
powder and pour over fruit. Bake in the same oven
as ham for 40 minutes. Serve from baking dish with
ham.

Southern Baked Ham


12 lb To 14 ham
Water to cover
1 c Brown sugar
Cream or water
Cloves

Soak ham overnight in water. In the morning, put
it on to boil in the same water. Boil til tender.
Remove from kettle, skin the ham. Make a paste of
the brown sugar and cream or water, spread over
ham, stick full of cloves. Bake about an hour.

Crustless Ham & Cheese Quiche

Yield: 1 Quiche

6 oz Lean ham; cut in 1/4" dice
3/4 c Frozen broccoli; thawed
1/2 c Jack cheese; diced
1/2 c Cheddar cheese; diced
8 lg Eggs
1/2 c Milk
1/2 ts Salt
1/4 ts Pepper

1. Preheat oven to 375°. Grease a 9" pie dish.

2. Arrange ham, broccoli & cheese evenly over
bottom of pie dish.

3. Blend remaining ingredients and pour over ham.

4. Bake until firm, about 40 minutes. Cover with
foil if it begins to brown too quickly.

5. Cut in wedges and serve.

Cheesy Ham-bites
About 8 servings.

A lovely dish, you can make with your leftover ham – perfect for brunch, as it can be prepared the night before, and baked in the morning.

4 eggs
1/2 teaspoon (1.25 ml) pepper
1 teaspoon onion powder
1/4 teaspoon chilli powder (optional)
1 cup (2,5 dl) milk
8 – 10 slices of sandwich bread – preferably whole wheat
2 cups (5 dl) chopped (prepared) ham
2 cups (5 dl) grated cheddar cheese

Mix the eggs with milk, pepper, onion powder and chilli powder, if using. Cut the ham in fine strips.

Line a baking pan with baking paper, and arrange the bread in the pan. You can lightly grease the paper, if you like – alternatively butter the bread ever so thin.
Mind you – the baking pan must fit in your fridge.

Sprinkle ham and grated cheese over the bread, and pour the eggs and spice over everything.

Place the baking pan in the refrigerator for at least 6 hours.

In the morning, preheat the oven to 310°F (155°C), and bake the pan of cheesy ham-bites for 20 – 30 minutes.

Serve immediately in the pan, or cut into individual servings.

Default Longhorn Lovers Ham

What you need:

12-14 lb. Ham
Brown sugar
Big can of sliced pineapple with juice

What You Do:

Place ham in roasting pan. Place sliced pineapple on top and sides of ham
with toothpicks. Mix pineapple juice with enough brown sugar to make
a runny paste. Pour some over ham saving some to baste as it is
cooking. Cover. Place in oven at lowest setting the night before.

You can get up every couple hours to baste with leftover juice but is
not required. The next day just let cook and baste uncovered until time
to eat. It is delicious and juicy and easy
