BLACK BEAN SOUP
Makes 8 servings
1 (15- to 15 ½-ounce) can black beans
1 (14.5-ounce) can peeled diced tomatoes
1 (3.5-ounce) package Spice Up Your Life Dip and Spread Mixes - To Bean, or Not to Bean
3 cups water
optional Fat free sour cream
optional Finely chopped onion
Combine black beans, tomatoes, dip mix and water in large saucepan; bring to a boil. Reduce heat to low and simmer 6 minutes, stirring occasionally. Place 1 cup of soup in blender or food processor; purée until smooth. Repeat with remaining soup. Return soup to saucepan and heat to desired temperature. Garnish with sour cream and finely chopped onion, if desired.
