Default LOW CALORIE OAT MUFFINS

LOW CALORIE OAT MUFFINS


3/4 c. all-purpose flour
1/2 c. whole wheat flour
3/4 c. quick cooking oats (not instant)
1 tbsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. salt
1 lg. egg
1 c. skim milk
2 tbsp. margarine or butter, melted
1 tbsp. honey
1 tsp. vanilla extract
3/4 c. finely chopped unpeeled sweet apples
3 tbsp. raisins

Preheat oven to 400 degrees. Grease muffin tins, or use paper baking cups. Thoroughly mix flours, oats, baking powder, cinnamon, ginger and salt in a large bowl. Beat egg with a fork or whisk in medium size bowl. Whisk in milk, margarine, honey and vanilla. Stir in apples and raisins. Pour over dry ingredients and fold in with a spatula just until dry ingredients are moistened. Pour into cups. Bake 20 minutes or until lightly browned. Makes 12.

LOW CALORIE BROWN BREAD


2 c. sour milk
1 egg, beaten
1/2 c. molasses
1 tbsp. soda
1 tsp. salt
3 c. graham flour
2 c. white flour

Combine first 3 ingredients in bowl; blend thoroughly. Combine dry ingredients. Add to milk mixture gradually, beating well. Turn into loaf pan. Bake at 350 degrees for 1/2 hour or until bread tests done. Yield: 1 loaf.
