WW: Easy Peanut Butter Cookies (1 point)


1 1/2 cups all purpose flour
1 1/2 Tbsp. cornstarch
1 3/4 tsps baking powder
1/2 tsp. baking soda
3/4 cup firmly packed brown sugar
1/4 cup granulated sugar
1/4 vegetable oil
1/4 creamy peanut butter (I used reduced fat)
1 1/2 Tbsp. light colored corn syrup
2 1/2 tsp. vanilla extract
1 large egg
cooking spray
3 Tbsp. granulated sugar

Preheat oven to 375ºF.

Combine flour, cornstarch, baking powder and soda in medium bowl, stir well, set aside.

Combine brown sugar, 1/4 cup granulated sugar, vegetable oil and peanut butter in large bowl. Beat medium speed with mixer 'til well blended. Add corn syrup, vanilla, and egg; beat well. Stir in flour mixture.

Coat hands lightly with cooking spray, shape dough into 48 - 1-in. balls (I used a cookie dough scoop sprayed with cooking spray instead to avoid the mess). Roll in 3 Tbsp. granulated sugar place 2-inches apart on cookie sheet sprayed with cooking spray, then flatten balls with bottom of glass.

Bake at 375ºF. for 7 minutes or 'til cookie bottoms are lightly browned. Remove from cookie sheet, cool on cookie rack
