Maple Walnut Muffins (3 Pts)
2 1/4 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chilled reduced calorie stick margarine ; cut into chunks
2 tablespoon maple syrup
1 teaspoon imitation maple flavoring
3 egg whites ; lightly beaten
1 carton plain nonfat yogurt ; 8-ounce
vegetable cooking spray
1/4 cup chopped walnuts
1. Preheat oven to 350°.2. Combine first 5 ingredients in a large bowl; cut in margarine with apastry blender or 2 knives until mixture resembles coarse meal. Combinemaple syrup, maple flavoring, egg whites, and yogurt; add to dryingredients, stirring just until dry ingredients are moistened. 3. Spoon batter evenly into 18 muffin cup coated with cooking spray;sprinkle walnuts evenly over batter. Bake at 350° for 25 minutes or untilmuffins spring back when touched lightly in center. Remove from panimmediately; let cool on wire rack.
Yield: 1 1/2 dozen (serving size: 1 muffin)
NOTES : These freeze well. Pop in microwave for 40 seconds and you have aquick breakfast at just 3 points.
