Crustless Quiche with Spinach, Sausage, & Mushrooms

Serves/Yields: 2-4
Prep. Time: 15 minutes

Ingredients
1 T. olive oil
1/2 small onion, chopped
1/3 tube mild pork sausage
1 sm. box frozen spinach, thawed & drained
1/2 c. mushrooms, chopped
4 oz. cream cheese
Garlic powder, to season
1/4 c. shredded cheddar cheese
1/2 c. shredded parmesan cheese
2 whole eggs
3 egg whites

Directions
In a med. pan, heat oil and add onions & sausage- saute until done. Add spinach and mushrooms, continue cooking an additional few minutes.
Remove from heat and stir in cream cheese and garlic powder. In a separate bowl, beat eggs then add spinach/mushroom mixture to eggs. Pour mixture into a sprayed round quiche pan. Top with cheeses. Bake in preheated 350 degree oven for 30 minutes or until done.
