Ham and Spinach Frittata
Ham and Spinach Frittata
Serves/Yields: 4
Prep. Time: 20 minutes
Ingredients
1/4 lb ham cubed
1/2 10 oz bag fresh spinach washed and dried well
2 tbls chopped oniom
1/2 fresh mushrooms sliced
3/4 cup shredded gruyere' cheese
3 whole eggs
2 egg whites
1 tbls butter
1 tsp ground nutmeg
Directions
Saute' onions, mushrooms and spinach in 1/2 butter in oven proof non-stick skillet till onions are tender and spinach is wilted. Remove from pan. Scramble eggs and egg whites. Add the rest of the ingrediants to eggs. Melt remaining butter in pan and pour in egg mixture. Cook till bottom of eggs are set and cooked about 1/2 way thru. It should slide around in the pan. Place under broiler and cook till light brown and bubbly. Slide onto a plate and let cool 5 minutes. Good for any meal!
