Philly Cheese Steak Frittata
Serves/Yields: 4
Ingredients
3/4 lb steak (bite size pieces) 3 ozs cheddar cheese (shredded) 3 whole eggs
2 egg whites
1 small onion sliced
1/2 green pepper sliced
1/2 cup fresh mushrooms sliced
1 tbls butter
Directions
Sautee' steak and veggies in oven proof non -stick skillet until cooked thru using 1/2 the butter or cooking spray. Remove from pan. Scramble the eggs and whites. Melt remaining butter in pan. Add the meat and veggies and cheese to egg mixture. Cook on medium until bottom is set and cooked about halfway thru and you can slide it around in the pan. Then place under the broiler until light brown and bubbly looking. Remove from oven and slide onto a plate. Cool for about 5 minutes. Yummy for any meal!
