Tuna

Serves/Yields: 4

Ingredients
two cans of tuna
2 eggs
7 oz extra firm tofu
1/4 cup heavy cream
shredded chedder
parmesan cheese
salt, pepper,
garlic powder

Directions
Slice the tofu into thin strips and put them in a mixing bowl drain the tuna and add it. In a smaller bowl beat the eggs, parmesan and cream. Fold the egg mixture into the tofu and tuna and pour it into a casarole dish. Put it in a 425 degree oven until the eggs start to set, then stir gently (try not to break up the tofu) and top with grated cheese. Bake until the top is slightly brown.
