Serves/Yields: 12
Ingredients
1/4 cup Canola oil
1/3 cup splenda
1/2 cup ground almonds
1/4 cup Atkins Bake mix
1/4 cup bran
dash salt
1 tablespoon baking powder
1 tablespoon wheat gluten
1 teaspoon Cinnamon
dash nutmeg
1/4 cup cream
1/4 cup cold water
2 large eggs
1 teaspoon vanilla
1/2 cup chopped walnuts -- or your choice
Directions
-In a mixing bowl, beat the eggs,add the oil, splenda, cream, water, vanilla.Beat well.
-In a smaller bowl mix all the dry ingredients together , then stir into the egg mixture.Batter will be runny like a cake batter.
-Spray 12 muffin tins & 1/2 fill each one with the batter.
-Bake in a preheated 350* oven for about 25 minutes.Test with a toothpick.
