Tempting Tropical Bread
NOTES:
You can use 3 regular eggs instead of Egg Beaters. The calories and fat will be higher, but the rest will be about the same.
REMEMBER:
If you substitute ingredients and your batter comes out thicker, it will take LESS time to cook. Equally, the looser your batter is, the longer it will take to bake.
Ingredients
1/2 cup soy flour
1/4 cup (1 oz/30 gr) crushed (unblanched) almonds
8 oz crushed pineapple in own unsweetened juice
1/4 cup (1 scoop) isolated soy protein
3/4 cup egg beaters
1 tsp banana extract
2 cups Splenda
1 tsp vanilla extract
1 tsp baking soda
1 tbsp Cinnamon
Directions
Preheat oven to 350 degrees and spray a loaf pan with non-stick spray. Mix all ingredients in a bowl with a spatula until well blended. Pour mixture into loaf pan. Sprinkle top with Splenda for a "crusty" top. Bake for 32-36 minutes. For a "gooier" top, take loaf out right after 30 minutes. Let loaf cool and cut into 8 equal portions.
