Raspberry Muffins
Raspberry Muffins
Serves/Yields: Makes 12
These muffins are more cake-like than fluffy. They will also turn out to be fairly dark because of the flax seed meal. But they're pretty tasty!
Ingredients
3 lg eggs
1 1/2 stick butter melted
2 tsp. vanilla
1 C. Protein Powder
3/4 C. Splenda
1 1/2 tsp. baking powder
dash of salt
1/2 C Raspberry devinci syrup
1/2 C. Water
1 C. Flaxseed Meal
Directions
Preheat oven to 350
Beat eggs and add in melted butter and vanilla. Continue to beat well. One by one, add the protein powder, splenda, baking powder and salt. Beat well. Stir in the syrup, water and flaxseed meal.
Put mixture into well greased muffin tins and bake for 25 minutes.
Nutrition Information
Carb count is around 2g per muffin after fiber. (This depends on your protein powder. Mine is 1g per 1/4 cup.)
