Sunflower Seed Bread
Ingredients
2 eggs
1 cup heavy cream
1 tsp. vanilla extract
1 stick (1/4 lb.) butter or 1/4 cup sunflower oil
1 cup nut flour (I used hazelnuts, and put through food processor)
1/4 cup sunflower seeds
1 tsp. baking powder
1/2 cup unprocessed bran
1/2 cup sugar equivalent, i.e. Splenda
Directions
Beat eggs, cream and vanilla. Melt butter (oil) and add to cream. Mix dry ingredients. Add wet mixture to dry. Bake 30-40 minutes at 350 degrees F. Check with a toothpick Serving size = 1/8 loaf. 5.2 g carb It is easy to make your own nut flower of almonds (good essential fatty acids source) or macadamia (good fat-to-carb ratio.) Just mill them in a coffee grinder or food processor. However, there are online stores that sell it. They also sell ready bread and pancake mixes.
