Asian Spicy Rice -
This tasty tofu and peanut-infused rice dish is a complete meal in itself. You can serve it hot, room temperature, or cold, and the addition of scallions, garlic, lime juice, and red pepper flakes make it a tasty addition to your summer-foods repertoire.
1 cup aromatic white rice (jasmine, Texmati, or basmati)
1/4 cup silken tofu
1/3 cup smooth peanut butter
2 tablespoons vinegar (unseasoned) or white wine vinegar
1 tablespoon tamari or good-quality soy sauce
2 teaspoons lime juice
1 teaspoon toasted sesame oil
1 clove garlic
1/4 teaspoon hot red pepper flakes
1/2 cup chopped cilantro
4 scallions, thinly sliced
1. In a medium saucepan, combine the white rice and 2 cups of water; bring to a boil. Reduce the heat, cover, and simmer for 20 minutes or until all the liquid is absorbed.
2. Remove from heat and let sit for 10 minutes, then fluff with fork. Keep the pan covered until ready to serve.
3. In a blender or food processor, combine the tofu, peanut butter, vinegar, tamari, lime juice, sesame oil, garlic, and red pepper flakes. Puree until smooth. Stir in the cilantro and scallions. Add rice, mix well, and serve.
Serves 6.
Cajun Dirty Rice
* 1 pound lean ground beef
* 1 pound beef sausage
* 1 onion, finely diced
* 1 (8 ounce) package dirty rice mix
* 2 cups water
* 1 (10 ounce) can diced tomatoes with green chile peppers
* 2 (15 ounce) cans kidney beans, drained
* salt and pepper to taste
DIRECTIONS:
1. In a skillet over medium heat, brown the ground beef, sausage, and onion; drain.
2. In a large pan, combine rice mix and 2 cups water. Add diced tomatoes and chilies. Stir in the kidney beans. Bring to a boil, then add meat mixture. Season with salt and pepper. Return to boil, reduce heat, and cover, stirring occasionally. Cook for 25 minutes, until rice is easily fluffed with a fork.
Spicy Thai Rice
Adjust the "heat" of this recipe by the number of chiles used. Sprinkle with soy or teriyaki sauce, if desired.
2 1/4 cups water 550 mL
1 cup uncooked USA long grain white rice 250 mL
1/4 cup chopped green onions 60 mL
1 to 2 fresh red chiles, seeded and chopped 1 to 2
1 tbsp each: chopped fresh cilantro and butter 15 mL
2 tsp minced fresh gingerroot 10 mL
1/2 tsp salt 2 mL
1/8 tsp turmeric 0.5 mL
2 tsp fresh lime juice 10 mL
Garnish (optional): roasted peanuts crushed red pepper flakes
In medium saucepan, combine water, rice, onions, chiles, cilantro, butter, gingerroot, salt and turmeric. Bring to a boil; stir once or twice. Reduce heat; cover and simmer for 15 to 20 minutes or until rice is tender and liquid is absorbed. Stir in lime juice; fluff with fork. Garnish with peanuts and pepper flakes, if desired.
Microwave Oven Instructions:
In large, microwaveable dish, combine water, rice, onions, chiles, cilantro, butter, gingerroot, salt and turmeric; stir. Cover and cook on High for 5 minutes. Reduce setting to Medium and cook, covered, for 15 to 20 minutes (45 minutes for brown rice), or until rice is tender and liquid is absorbed. Stir in lime juice; fluff with fork. Garnish with peanuts and pepper flakes, if desired.
Makes 4 to 6 servings.
"Spicy Red Rice"
Ingredients:
1 cup uncooked rice
2 cups chicken or vegetable broth, heated
2 tblsp canola oil
1 tblsp butter
1/2 onion, chopped
3-4 tblsp Chili Pepper Paste
Directions:
Heat butter and oil in saucepan.
Add onions stew until golden (5 minutes).
Add rice and stir until all grains are coated.
Add broth and cover and let simmer for 5 minutes.
Add Chili Pepper Paste and stir.
Cover and simmer until rice is cooked and liquid is absorbed.
Smoke Signals Rice Recipe
Serves/Makes: 6
* 2 cups rice
* 2 tablespoons oil
* 2 tablespoons canned chipotle peppers in adobo sauce, chopped
* 4 cups water
* 1 teaspoon salt
Directions:
Saute rice in oil over medium heat until each grain of rice is slightly browned. Add water and chipotles, and stir well. Heat to boiling, then reduce heat and cook over low 25 minutes. Fluff and serve. Makes about 6 1-cup servings.
