Big Bang Broccoli Salad

A tangy salad with crunch & punch!!!


Ingredients:


1 large or 2 small broccoli heads
2 slices of cooked bacon
1 large handful of raisins
1/2 cup chopped pecans
1 small red onion chopped
1/2 yellow or orange pepper chopped
dressing-Mango Poppy seed dressing
1/2 cup light mayo
1/4 -1/2 cup rice wine vinegar
2-3 crushed garlic cloves
1 tsp crushed black pepper
1 tsp honey

Blanch broccoli or place in microwave on high for 30 sec. (just enough to cook, but still keeping the crunch) -mix with raisins,pecans,onion,peppers & bacon (omit for vegetarians) set aside. In meantime mix dressing ingredients ( or use Farm Boy's Mango Poppy seed dressing),approx 1 hr before serving add to salad, mix well and refrigerate. A nice change to coleslaw, great served with any favorite BBQ meat from salmon to ribs to chicken. Enjoy!!!!
