SALSA CON QUESO

1 block Velveeta cheese
1 12 oz can refried beans
1 12 oz jar salsa
1 lb browned ground beef
1 cup milk

Combine all ingredients into crockpot. Heat on high for 1-2 hours. Makes enough dip for about 10 people.

~~~~~~~~~~~~~
1 lb Velveeta Process Cheese Spread, cubed
1/2 c Pace Thick & Chunky Salsa
Combine ingredients in saucepan. Cook over low heat, stirring frequently, just until sauce is smooth. Serve with corn chips, tortilla chips or vegetable dippers. Makes about 2 cups.
MICROWAVE OVEN DIRECTIONS:
Combine ingredients in 1-quart microwave-safe bowl. Cook at HIGH 3-4 minutes or until cheese spread is melted, stirring after each 1-1/2 minutes.
~~~~~~~~~~~~~~~

1 block Monterey Jack cheese (Light) 227 g
3 T Sambal Oelek (chilli-pepper paste, check the markets, east Indian shops & Dutch shops (it's made in Holland)
2 T Crushed Red Pepper
2 Tomatoes, seeds removed & diced (1/4" to 1/2"). Also use the juice, if any.

? Shred the cheese (or cut 1/8" to 1/4" slices & crumble) into a microwave safe bowl. It should look something like cottage cheese curds.

? Add the Sambal Oelek. Those that don't want it too hot should reduce this to 1 tablespoon.

? Add the crushed red peppers. Again, for less heat, reduce to 1 tablespoon.

? Mix it a bit.

? Microwave a minute at a time & mix again. Repeat.

? Add diced tomatoes.

? Microwave as above until well mixed & bubbly.Spoon over tortilla chips. Sauce will cool & thicken relatively quickly when compared to the commercial preparations.

Sometimes I will melt cheese in half and half (I may mix different cheeses) and I add salsa and seasonings to taste. Beans, chiles or ground beef can be added. Sorry - I don't measure - I just eyeball it.

I too eyeball it....I mix 6 oz cubed veleeta with 3 oz cubed cream cheese.
Microwave for 1 to 2 minutes. Stir in 1/2 cup of any chunky salsa. Top with
thinly sliced green onion.

Hope this helps

I made this and it was a big hit.
1 lb velveta
2 16 oz cans of hot chili with beans
1 can spicy bean dip.
melt cheese and beans in micro wave until mixture is creamy.
Add can of hot bean dip and stir to mix in.
serve with chips sour cream and salsa if desired. It's great over baked potatoes too.
