    Thumbs up Rafferty's Potato Soup



    6 medium potatoes, peeled and diced
    1 medium onion, finely chopped
    1 (8oz) package cream cheese
    1/2 stick butter or margarine
    1 can cream of mushroon soup
    1 can cream of celery soup
    1 cup milk
    1 tsp garlic salt
    salt and pepper to taste

    In a large sauce pan cook potatoes & onions in only enough water to cover, When tender (But not mushy) add cubes of cream cheese. Remove from heat and stir until cream cheese is melted. Add butter, soups, milk & seasoning. Heat to serving tempt.

    May be topped with graded cheese, bacon bits & or chopped green onions.
    Good with a toasted dinner role or crackers.

    I made this soup tonight for dinner and it was awesome! I did change a couple things, I cooked the potatoes in Chicken Broth instead of water and I add some dices ham. Wonderful! This recipe is a keeper! Thanks for sharing!
