Fresh Ham Is An Uncured Pork Hind Leg. Oven Roasting With Herbs & Spices Is The Most Popular Method For Cooking This Succulent Cut.
1 - 10 Lb Fresh Ham, Skin Removed
4 Fresh Bay Leaves, Each Cut Into Quarters
4 Garlic Cloves, Each Cut Into 4 Slivers
2 Tsp Salt
2 Tsp Coarse Ground Black Pepper
3 Tbsp Water
3 Tbsp Coarse Ground Coriander Seeds
3 Tbsp Cracked Yellow Mustard Seed
2 Tbsp Dijon Mustard
1 Tbsp Finely Chopped Fresh Thyme
Preheat Oven To 375°f.
Trim The Fat On The Ham To A Thickness Of ¼ Inch & Lightly Score Ham Face With A Knife To Make A Checkerboard Pattern. At The Crossing Points Of The Scoring, Insert A Piece Of Bay Leaf & A Sliver Of Garlic. Sprinkle Entire Ham With Salt & Pepper.
Whisk The Water, Coriander Seed, Mustard Seed, Mustard & Thyme Together. Rub Ham With Spice Mixture.
Place The Ham In A Roasting Pan Fitted With A Flat Rack & Place In The Oven. Roast For 45 Minutes, Then Lower The Oven Temperature To 325f, & Continue Roasting Until A Meat Thermometer Inserted Into The Centre Of The Ham Reads 150f, About 2¾ Hours.
Remove From The Oven & Let Rest 15 Minutes Before Carving.
