Cheese Bread
1 cup milk
1/4 cup sugar
1 Tbsp salt
1/2 cup warm water (105-115 degrees)
2 packages dry yeast
1/4 lb. sharp cheddar cheese, grated
1 tsp dry mustard
1/8 tsp cayenne pepper
4-1/2---5 cup sifted flour
1 Tbsp butter, melted
heat milk just until it bubbles, remove from heat. add sugar and salt,
stirring until lukewarm. sprinkle yeast in and stir to mix. stir milk
mixture, cheese, mustard, cayenne pepper and 2 cups of the flour. beat
with wooden spoon for 2 minutes. slowly mix in the rest of the flour by
hand. knead for 10 minutes. put in large greased bowl, brush top with
melted butter. cover and let rise about 2 hours. punch down dough and then
turn onto board shaping into small ball. cover with towel and let rest 10
minutes. roll into 12x8 inch rectangle. roll into jelly roll from long
side. pinch edges to seal and place seam side down onto greased pan. cover
and let rise 1 hour or until double. bake at 400 degrees for 20 minutes,
then cover with foil and bake 10 to 15 minutes longer. yield: 1 large
loaf.
