Cacio E Pepe (toasted Chickpeas)


2 – 15 Oz Cans Chickpeas 1 Cup Freshly Grated Pecorino Romano
1 Tsp Coarsely Ground Pepper

Rinse & Drain The Chickpeas, Then Let Dry On Paper Towels.

Place The Chickpeas In A Large Nonstick Skillet Over Medium Heat & Toast, Shaking The Pan Occasionally, Until Golden, About 15 Minutes.

Add The Cheese & Pepper & Shake The Pan To Evenly Coat The Chickpeas.

Remove From The Heat & Continue Shaking The Pan Until The Cheese Is Golden & Sticks To The Chickpeas.


Makes 3½ Cups.
