Hj's Green Chili Sauce Rice n Cheese
6 qt pot quick and easy for the family

I created this recipe and it is so light-filling-and flavorable.


1 -28 oz. can of Hatch Green Chili Enchilada Sauce
1 - 15 oz. can whole Hunts tomatoes …no juice
1 med. Onion …chop large
1 tiny carrot sliced thin
½ can black olives drained …sliced thin
1 huge tsp. cumin powder
½ tsp. + Mexican oregano
1 large bay leaf
green onion stem one if you have
Broth from my pork- beef meat with no fat
Rice ... brown 3 hands full…uncooked or cook and add it at the end.
little chopped cilantros….. very little maybe 1 Tbl.

All in pot.. . cook and stir . . till rice all cooked.

Place in seperate bowls .......add some grated mixed Mexican cheeses on top when serving so it melts and shredded lettuce on top of the Cheese with Tostados corn white scoops on the side. oh my. This is so good.

This takes very little time to make. Maybe total 40 minutes. Just put it on and stir once in awhile. Let it cook Walla
