Default Ricotta Cheese Cookies

2 cups sugar
1 cup butter
15 ounces ricotta cheese
2 teaspoons vanilla
2 large eggs
4 cups flour
2 tablespoons baking powder
1 teaspoon salt

ICING:
1 1/2 cups powdered sugar
3 tablespoons milk
red or green colored sugar

Preheat oven to 350ºF. In large bowl, with mixer at low speed, beat sugar and butter until blended. Increase speed to high; beat until light and fluffy, about 5 minutes.

At medium speed, beat in ricotta, vanilla, and eggs until well combined. Reduce speed to low.

Add flour, baking powder, and salt; beat until dough forms.

Drop dough by level tablespoons, about 2 inches apart; onto ungreased large cookie sheet.

Bake about 15 minutes or until cookies are very lightly golden (cookies will be soft) With spatula, remove cookies to wire rack to cool. Repeat with remaining dough.

When cookies are cool, prepare icing. In small bowl, stir icing sugar and milk until smooth. With small spreader, spread icing on cookies; place a candied cherry piece on top of each cookie. Makes 6 dozen cookies. These freeze well.

CACTUS JUICE COCKTAIL

1 pint chilled prickly pear juice ; (fresh or purchased)
1 pint chilled cranberry juice
1 quart chilled ginger ale


Mix juices in 2-quart pitcher. Add ginger ale. Dip rim of glasses in mixture of lemon juice and water, then sifted powdered sugar.

Pour cocktail over a couple of ice cubes in glass.


Christmas Cocktail Recipe

1/2 cup Sugar
2/3 cup Water
2/3 cup Unsweetened pineapple juice
2/3 cup Lemon juice
2 tablespoons Fresh or bottled lime juice
2 Unbeaten egg whites
4 cups Finely crushed ice
Maraschino cherries

Cook, sugar and water 5 minutes; chill. Shake all ingredients except cherries in jar until light and frothy. Top with a cherry. Serve immediately.



Pina Coladas

2 medium bananas
1 cup diced pineapple
1 teaspoon coconut extract
2 tablespoons lime juice
3 teaspoons sugar
3 cups milk
1 cup ice cubes


Place the bananas in a blender and puree. Add the remaining ingredients and puree until smooth.



Non-Alcoholic Mimosas


2 cups orange juice
2 cups gingerale

Combine orange juice and gingerale. Pour into chilled champagne glasses.
