Chicken with Pickled Peppers

Chicken with Pickled Peppers

1 whole chicken
4 Tbsp. extra virgin olive oil
1/2 cup wine vinegar
1 jar sweet vinegar peppers, sliced, reserve vinegar
2 Tbsp. parsley, chopped
4 garlic cloves, sliced
2 bay leaves
1 tsp. oregano
1/2 lb. mushrooms, sliced
Salt/pepper

Cut chicken into serving pieces. Brown in olive oil and garlic. Add all other ingredients, cook uncovered for 45 minutes. Last 15 minutes add pickled peppers and reserved vinegar. Cover and steam for 15 minutes.
