I don't have an original recipe for it , but I had a newsletter years ago and they used a package of Italian dressing mix, the dry one you mix with oil and vinegar. Just use the dry mix added in the flour to coat your chicken. Also KFC pressure cooks their chicken first and then fries it. This I know because my brother worked there.

No you coat the chicken in the flour and seasoning mix after you pressure cook it. Mix the flour and seasoning mix together then dip your chicken in it. I would let it air dry for about 30 min before I fried it to let the coating set up so it doesnt all come off while cooking.

Default Kentucky Fried Chicken Spice Mix

Kentucky Fried Chicken Spice Mix

1 tablespoon rosemary
1 tablespoon oregano leaves
1 tablespoon powdered sage
1 teaspoon powdered ginger
1 teaspoon marjoram
1 1/2 teaspoons thyme
3 tablespoons packed brown sugar
3 tablespoons dry minced parsley
1 teaspoon pepper
1 tablespoon paprika
2 tablespoons garlic salt
2 tablespoons onion salt
2 tablespoons chicken bouillon powder (or 4 cubes, mashed)
1 package Lipton tomato Cup-a-Soup mix

Method

Place all ingredients in blender and pulse for 3-4 minutes to pulverize, or rub through a fine strainer. Store in an airtight container so the spices will not lose their potency. Makes about 3/4 cup.
Add 1 ounce mix to every one cup of flour for coating chicken.

KFC CHICKEN

1 chicken or chicken pieces
3 cups water
1 Tablespoon Salt
1 teaspoon MSG ( Ac'cent) by the spices
2 teaspoons Onion Powder
2 pkg.Dry instant Chicken Broth ( Do Not used Canned)
2 teaspoon Seasoned Salt
1/2 teaspoon Black Pepper
1 cup Flour

1. Cover chicken with mixture of water and salt. Chill in bowl for at least 1 hour.
2. Combine herbs, onion powder,seasoned salt, instant chicken broth, and pepper, in a blender and mix well. Pleace this mixture in w bowl. Add the flour to this bowl. Mix flour and seasonings well
3. Remove chicken from water, and dip it into the flour mixture coat well. Place coated pieces on a plate for 5 min.
4. Melt enough shortening or sald oil to make 1-inch depth in a large skillet. Heat to 375 . Fry chicken pieces turning once, every 5 min. be sure to cook chicken until done. Lift chicken out and drain on paper towels. You can keep the chicken warm in the oven by placing it in the oven, and serve when all the chicken is done.

No they do not pressure cook it and then fry it. It is fried in a pressure cooker. I use to be a KFC mgr. And I cooked ton's of chicken. And I still eat it today.

Default How To Pressure Cook KFC Chicken

Place 6 cups of Crisco shortening into your pressure cookerand heat on
medium till shortening reaches 400F. Place coated chicken, 4 or 5 pieces
at a time into shortening and lock lid. When pressure builds up cook for
10 minutes.

Follow manufacturers instructions for your pressure cooker to release!

Default Is it Safe to Deep Fry in a Pressure Cooker

I would assume so, I got this information from a recipe for
KFC Original Chicken I have. Personally I don"t own a pressure
cooker and have never tried this method.

My best advice would be to consult the manufacturer's manual
that came with your pressure cooker.

Here is the recipe I have for Kentucky Fried Chicken have never tried it but its a recipe my sister gave me and says its exactly like KFC.
4 C flour 2tsp salt
1tsp celery salt
1tsp pepper
2tsp dry mustard
4tsp paprika2tsp garlic salt
1tsp ginger
1/4 tsp thyme
1/2 tsp sweet basil
1/2 tsp oregano
Mix all together.
Mix:
1 egg
1/4 C milk
Dip chicken into it, coat chicken with above mixture and fry in oil 15-20 mins on each side or bake @ 350 deg

I worked for KFC for 15 yrs now and cooked lots of it .
let me tell you all about it now ,for the seasoning it all comes permixed now ,when I was in it it came in a package, there was lots of diff. kinds of peppers in it and other thing did not get to find out just what was in it now. but let me tell you how it is cooked . the chicken is put into a egg wash frist and then into the flour and seasoning. then put into the pressur pot and let to drown for three min. the lid goes down and cooked for another 8 mins. and thats how it is done

I got this years ago when I worked there


KFC Original Fried Chicken


1 frying chicken, cut into frying pieces
1 1/2 cups flour
1 Pkt. (dry) Good Seasons Italian Dressing (THE 11 herbs and spices!)
1 Envelope Lipton (or other brand) Tomato Cup of Soup
2 eggs, well beaten
2/3 cup milk
Vegetable oil to cover bottom of your skillet; about 1/2 inch deep.

1. Combine eggs and milk. Set aside.
2. Combine flour with the Italian dressing and soup mix.
3. Dip chicken pieces in milk-egg mixture and roll them in the
flour-seasoning mixture. Repeat procedure.
4. Fry pieces over medium heat for 25 to 30 minutes, turning often.
5. Remove from fire. Drain and serve.

Default KFC Fried Chicken

~~~KFC Chicken~~~

1 (3 to 6 lb.) chicken, cut into 8 serving sized pieces, discard backbone and tail
1/4 to 1/2 cup melted butter

Dredge:
3 cups self rising flour
2 env. Good Seasons Italian Dressing mix
2 env. Lipton Cup A Soup Tomato
1 TB paprika
1 tsp. season salt (Lawry's or McCormick)

Mix dredge ingredients in a large bowl, and set aside.

Dip chicken pieces in melted butter and then dip in the Dredge; coating well. Place 2 baking racks on a 10" x 15" jelly roll baking pan. Place chicken pieces on a baking racks and let air dry for 1 hour.

Place pan with chicken in a preheated 350 degrees F., oven and bake for 60 minutes or until chicken is completely done.

Salt, salt, and more salt. Soak it in a salt brine, add plenty of salt to flour, and a little bit of pepper,and then fry. Just check out the health facts for each KFC piece of chicken. It will scare you.

Default KFC Chicken recipe

My KFC Chicken recipe:


Ingredients:

1 whole chicken cut into ten pcs. or ten whole legs with skin
3 eggs
1 cup all purpose flour
salt, black pepper, garlic powder, adjinomotto
oil for frying
2 1/2 cups of water

Procedure:

Thoroughly clean the chicken by rubbing salt and wash through running water. Then cut it into ten pcs. Marinate it with salt, black pepper, garlic powder and adjinomotto for 5-6 hrs or overnight to have a better taste. But if you are in a hurry you can also marinate for 1-2 hrs. Place the chicken in a deep pot, put 2 cups of water and boiled it for 10 minutes. Do not over boiled coz chicken will be seperated from the bone. Drain the broth and set aside. In a separate mixing bowl, beat 3 eggs 1/2 cup of water then add 1 cup of all purpose flour, mix it well into a creamy batter. Heat the oil using wok or deep frying pan. Deep the chicken pcs into the batter mix and fry it till golden brown. Your fire must be moderate so your chicken will be cook insde. Serve it with french fries and KFC Gravy or Ketsup


KGC Gravy

1 beef cubes
1/2 tsp of b\white pepper
3 tbs of corn flour
1 cup water


Procedure:

place water, beef cubes and white pepper in a sauce pan and bring it to boil. Mix water and corn flour and then add to the water mixture, stir it until it thickens.

Thanks for the recipes. A few of you are correct. It is cooked
in a pressure cooker. NOT FRIED AT ALL.
That's why the restaurant is now called KFC, not Kenturcky Fried Chicken.
Someone 'sued' them because they used the word 'Fried' in their
name and the chicken was not fried....it's pressure cooked.

There are a variety of KFC recipe clones circulating the net....RD's e-book entitled "America's Most Wanted Recipes" has a great recipe for "The Colonel's Chicken" ....I bought the book...and I must say, it's a great buy. I won't post it, as that would be a disservice to Ron....this is how the man makes part of his living! Actually, I think the book is undervalued...and I say this freely....I have no vested interest in Ron's publication. It's just a great buy. My family has enjoyed many of the recipe titles. So, show your support and head to www.recipesecrets.net home page. There is a link there. Anti-up, and you can download your recipe book immediately...no waiting...no hassle. If your doubtful...follow the link and see some of what's included. If you choose not to pirchase the ebook...then your missing out ona great deal. I too have been desperately looking for the recipe for KFC's original recipe chicken. I've purchased Todd Wilbur's book of recipes and it's not in the one I purchased nor the one I rented from the library. While visiting this website I noticed a rotten person calling himself B-Man bragging that he's tasted the recipe from RecipeSecrets.net and won't share it because he wants the rest of us to pay!! When I look at this website I can't wait to share the tried and true recipes that will make other's happy. B-man is one of those selfish guys that can't stand to see someone happy unless he thinks they've paid enough.

I won't share the recipe quite simply for the previously stated reasons....also the contents of the book are copyright! Are you intelligent enough to understand that. You are welcome to your opinion, but have a look at the number of posts that I've made as an attempt to share with others....I don't make a dime off of RD's book nor the recipes that I've posted....so how do you equate that with never being satisified until people have paid enough....and that I'm selfish? It is plain to see that your just a free loader...looking for something and expecting to receive it token gratis. No doubt you've scabbed many reciopes without even extending the common courtesy of posting a thank you to the contributor....so now who is the selfish one. And as for bragging about the recipes in the book...you're way offside...I stated that my family had enjoyed many of the recipes...THAT I PAID FOR !!! 2 frying chickens with skin, each cut into 8 pieces

Pour the oil into the pressure cooker and heat over medium heat to about 400 degrees F.
In a small bowl, combine the egg and milk.
In a separate bowl, combine the remaining four dry ingredients.
Dip each piece of chicken into the milk until fully moistened.
Roll the moistened chicken in the flour mixture until completely coated.
In groups of four or five, drop the covered chicken pieces into the oil and lock the lid in place.
When steam begins shooting through the pressure release, set the timer for 10 minutes.
After ten minutes, release the pressure according to manufacturer's instructions, and remove the chicken paper towels on metal rack to drain. Repeat with the remaining chicken.

Makes 12 pieces

Tidbits
If you prefer not to use MSG, you may substitute an additional 1/2-tablespoon of salt. Be aware, however, that using MSG produces the best clone of KFC's Fried Chicken.

KFC Extra Tasty Crispy Chicken

by Todd Wilbur



1 whole frying chicken, cut up
6-8 cups vegetable oil

Marinade
4 cups water
1 tablespoon salt
1/2 teaspoon MSG (see Tidbit)

Coating

1 egg, beaten
1 cup milk
2 cups all-purpose flour
2 1/2 teaspoons salt
3/4 teaspoon pepper
3/4 teaspoon MSG


1. Trim any excess skin and fat from the chicken pieces. Preheat the oil in a deep-fryer to 350 degrees.
2. Combine the water, salt and MSG for the marinade in a large bowl. Add the chicken to the bowl and let it sit for 20 minutes. Turn the chicken a couple times as it marinates.
3. Combine the beaten egg and milk in a medium bowl. In another medium bowl, combine the remaining coating ingredients (flour, salt, pepper and MSG).
4. When the chicken has marinated, transfer each piece to paper towels so that excess liquid can drain off. Working with one piece at a time, first coat the chicken with the dry flour mixture, then the egg and milk mixture, and then back into the flour. Be sure that each piece is coated very generously. Stack the chicken on a plate or cookie sheet until each piece has been coated.

MSG is Monosodium Glutamate, the solid form of a natural amino acid found in many vegetables. It can be found in stores in the spice sections and as the brand name Accent flavor enhancer. MSG is an important component of many KFC items.





KFC Extra Tasty Crispy Chicken


1 whole frying chicken, cut up
6-8 cups vegetable oil
Marinade -
4 cups water
1 tablespoon salt
1/2 teaspoon MSG (see Tidbits)


Coating

1 egg, beaten
1 cup milk
2 cups all-purpose flour
2 1/2 teaspoons salt
3/4 teaspoon pepper
3/4 teaspoon MSG

1. Trim any excess skin and fat from the chicken pieces. Preheat the oil in a deep-fryer to 350 degrees.
2. Combine the water, salt and MSG for the marinade in a large bowl. Add the chicken to the bowl and let it sit for 20 minutes. Turn the chicken a couple times as it marinates.
3. Combine the beaten egg and milk in a medium bowl. In another medium bowl, combine the remaining coating ingredients (flour, salt, pepper and MSG).
4. When the chicken has marinated, transfer each piece to paper towels so that excess liquid can drain off. Working with one piece at a time, first coat the chicken with the dry flour mixture, then the egg and milk mixture, and then back into the flour. Be sure that each piece is coated very generously. Stack the chicken on a plate or cookie sheet until each piece has been coated.

KFC® Mashed Potatoes & Gravy

Gravy
1 tablespoon vegetable oil
4 1/2 tablespoons all-purpose flour
1 can Campbell's chicken broth (plus 1 can of water, see Tidbits)
1/4 teaspoon salt
1/8 teaspoon MSG or Accent Flavor Enhancer
1/8 teaspoon ground black pepper

Mashed Potatoes
1 1/2 cups water
1/3 cup milk
3 tablespoons butter
1/2 teaspoon salt
1 1/2 cups instant mashed potato flakes (Potato Buds)


1. First make a roux by combining the oil with 1 1/2 tablespoons of flour
in a medium saucepan over medium/low heat. Heat the mixture for 20 to 30 minutes, stirring often, until it is a chocolate color.
2. Remove the roux from the heat, add the remaining ingredients to the
saucepan, and stir.
3. Put the saucepan back over the heat, turn it up to medium, and bring
the gravy to a boil. Reduce heat and simmer for 10 to 15 minutes, or until thick.
4. As the gravy is reducing prepare the potatoes by combining 1 1/2 cups of water, 1/3 cup of milk, butter, and 1/2 teaspoon of salt in a medium saucepan over medium heat. Bring to a boil, then remove the pan from heat. Add the potato flakes, and whip with a fork until fluffy.
5. Serve the mashed potatoes, with gravy poured over the top. As if you didn't know.

Makes 3 to 4 servings.

Tidbits
If Campbell's chicken broth is not available you can use 2 1/2 cups of any chicken stock.

Kentucky Biscuits


Todd Wilbur has not yet cloned the famous KFC Biscuits in any of his previous books, but he wsas able to sneak this recipe from the KFC kitchens-courtesy of the Colonel himself.

1 1/2 cups flour
1 1/2-teaspoons salt
1 tablespoon sugar
1 tablespoon baking powder
2/3 cup milk
1/3 cup vegetable shortening

Preheat oven to 425 degrees.
In a mixing bowl; sift flour, salt, sugar and baking powder. Make a nest in the flour mix and add milk.
Add shortening and begin kneading with hands (to cut in) the vegetable shortening and flour in the milk until thoroughly mixed. Add milk, if needed for form, and mix.
Turn onto floured board and knead gently 6 to 8 times.
Pat dough to 1/2-inch thickness. Cut into biscuits.
Place on baking sheet and brown in oven 10 to 13 minutes.

Makes about 9 biscuits.


This appeared in our daily newspaper. I have absolutely no idea
where she managed to get this from and make the above remark.
Shocked me for this town.


KFC®BBQ Baked Beans


2 15-ounce cans small white beans (with liquid)
2 tablespoons water
1 tablespoon cornstarch
1/2 cup ketchup
1/2 cup dark brown sugar
2 tablespoons white vinegar
4 teaspoons minced fresh onion
2 pieces cooked bacon, crumbled
1/2 teaspoon dry mustard
1/4 teaspoon salt
dash pepper
dash garlic powder

1. Preheat oven to 350 degrees.
2. Pour entire contents of two 15-ounce cans of beans into a covered casserole dish.
3. Combine the water with the cornstarch in a small bowl until cornstarch dissolves. Stir mixture into the beans.
4. Stir the remaining ingredients into the beans and cover the dish.
5. Bake for 90 minutes or until sauce thickens. Stir every 30 minutes. Let beans sit for 5 to 10 minutes after removing them from the oven before serving.

Makes 6 servings.

Whoa backonline123...boy did you miss the point. Go back and re-read the post from bman. Then I would suggest you go to a site that explains about copyright law, about which you obviously know nothing. If you are going to shoot off your mouth you should at least know what you are talking about. You can't be that bright if you paid good money for a book that didn't have the recipe you were looking for..duh.The KFC recipe IS in one of the Todd Wilbur books and I know which one. You shouldn't bother looking for recipes anyway, because someone with your attitude most likely is not a good cook. People with a true passion for food and cookbooks and recipe sharing, like bman and the rest of us registered on this site, treat people with respect

I'll take the first step and be a gentleman about this. I apologise to our Guest, BACKONLINE123, and retract referring to you as a moron and as cognitively challenged... Indeed, I have no way of supporting these assertions. The balance of my points remain. Your unfair, unjust and untrue assertions that you vaulted at me, raised the ire, in my Irish blood. As for not sharing the KFC recipe, which I noted was copyright from RD's book... I will still not post. Perhaps you should ask Ron yourself for the recipe...if he gives it to you...well your away to the races, as the expression goes. And if not, I guess you'll have to anti up and buy the book! Yes, Ron, you are right and I too will say a sorry to backonline123. I should not have assumed to know the level of knowledge that backonline has in regards to copyright law, book purchasing and cooking. The comments 'got my Irish up' as well.
