Default Dinner Grilled Cheese

Who said that grilled cheese would not be a good dinner dish???

Using thick sliced sourdough, homemade or Italian bread (sliced about 3/4-inch - 1-inch thick), butter the "insides" of the bread slices very lightly; place a slice of cheese of choice on each bread slice, place a tomato slice on one slice and a slice of deli ham on the other slice of bread; set aside.

In skillet, saute chopped onion in a bit of butter and a very light drizzle of olive oil; when translucent, add beaten eggs, salt and pepper to taste; scramble your eggs (do not make them dry!)

Spoon scrambled eggs on one half, top with second half; butter outside of bread very lightly and place in very lightly oiled (using olive oil) pan - be sure to heat pan, then drizzle a bit of olive oil; make sure oil is hot - then place assembled sandwich(es) in pan. Grill/toast well on first side, then flip to toast well on the other side.

Serve with fried potatoes, hash browns or tater tots.

Another version:

Use mozzarella cheese, sliced sandwich pepperoni, sliced banana peppers and scramble eggs seasoned with salt, pepper, basil and a pinch of marjoram; add sliced tomatoes if desired.

Serve with seasoned fries or baked potato wedges.

Heat some pizza or spaghetti sauce for dipping!

Southwest style:

Fry Steak-Ums; drain and set aside. Use monterey jack or pepper jack cheese, Steak-Ums, chilies or scramble eggs with chilies, season with salt, pepper and cilantro.

Serve with Spanish Rice and try salsa for dipping your sandwich in!
