Default Chess Pie

I have been copying Mother's recipes to make a booklet to give to my nieces for Christmas. The notations are being left for you to read.

Aunt Annie’s Chess Pie

Mother has written on the card this is on “Annie “Sister’s” Recipe. She called Aunt Annie Sister sometimes. They were the sisters to six brothers.

½ cup sugar
2 Tsp flour
1 tsp vinegar
½ cup oleo
1 tsp vanilla
¼ sweet milk
Mix well with a mixer.
Add 3 eggs one at a time.
Bake at 375 till brown


Chess Pie

This is my sister’s recipe. I guess the next generation is taking over.

2 whole eggs, beaten
1 cup of sugar
½ cup of brown sugar
1 Tsp of cornmeal
1 Tsp of flour
¼ cup of milk
½ cup melted butter
½ tsp of vinegar
1 tsp of vanilla

Mix all ingredients well. Pour into an uncooked pie shell. Bake at 325 degrees for 45 minutes.

Simple Pastry

1 cup flour
3 Tsp butter or fat ( I assume this is Crisco)
½ tsp of salt
A bit of sugar

Mix with ice water. Fold and chill. Makes 2 shells. (I take it everyone knows how much to moisten the flour to make the dough. The recipe did not have further instructions.)



I had this Thanksgiving and it was so good. Like a custard pie.

Carolyn Guess’s Chess Pie
This is not syrupy sweet and has a custard flavor which is good.

1 stick softened margerine
1 cup sugar
3 eggs
2 Tablespoons cornmeal
1 Tablespoon vinegar
1 teaspoon lemon flavoring
1 teaspoon vanilla

Combine sugar & margerine (cream well)
Add all other ingredients and mix well.
Pour into an unbaked pie shell.
Bake at 325 degrees for 45 - 50 minutes.
