Toffee Topper Cookies
4 oz. Butter Toffee Candy, crushed (1/2 cup)
2 cups sifted flour
1 tsp. soda
1/2 tsp. salt
3/4 cup butter
1 cup firmly packed brown sugar
1/4 cup sugar
1 egg
1-1/2 tsp. vanilla
Sift together the flour, soda and salt. Cream the butter and sugars well. Add the egg and vanilla. Beat well. Blend in the dry ingredients gradually, mixing thoroughly. Shape into balls using a rounded teaspoonful of dough for each. Flatten to 1/2 inch thickness using the floured bottom of a glass. Cover each cookie with about 1/2 tsp. of the crushed candy.
Bake at 400 for 8-10 minutes. Remove from baking sheet immediately.
