1 lb ground beef
1 T chili powder
1 clove garlic
1/2 t salt
1/2 c chopped onion
3 c prepared white sauce
1/2 t sage
1/2 t oregano
1/2 t cumin
2 T chopped, green chiles
2 c cheddar grated
2 chopped tomatoes
12 flour tortillas
1/2 Head iceberg lettuce, shredded
Brown ground beef and drain. Add chili powder, garlic, salt and onion. Combine white sauce, sage, oregano, cumin and chiles. Simmer over very low heat til warm. Reserve 1 c sauce and 1 c cheese. Mix remaining sauce and cheese with meat. Place this mixture in tortillas, roll and place seam side down in a flat ungreased baking dish. Top with reserved sauce and cheese. Cover with foil and bake at 350 for 15 min.
Do this with shrimp and/or crab. Just leave off the chili powder and use Monterey Jack cheese instead of cheddar. Everything else is the same.
