Succotash with an Italian Flair
2 Teas. Extra Virgin Olive Oil
1/2 Cup Red Onion, Chopped
1 Clove Garlic, minced (optional)
12 oz. Bag of Corn Kernels, thawed
2 Cans 14.5 oz. size of Italian Chopped Tomatoes with Herbs
1 Can 14.5 oz. size of Cannellini Beans, drained and rinsed
1 Tab. Fresh Basil, chopped
2 Tabs. Fresh Italian Parsley, chopped
In skillet over medium heat, saute chopped onion and garlic until tender, about 3-5 minutes. Add corn, beans, and tomatoes, and simmer until heated thoroughly, about 10 minutes. Add chopped fresh herbs and serve.
