Sweet Spanish Onion Turnovers
1 large swweet Spanish onion
3 tablespoons butter or margarine
1/2 teaspoon salt
Dash pepper
1/4 teaspoon crushed basil
Never Fail Pastry (see below)
1/2 cup grated sharp cheddar
1 tablespoon milk
Peel and thinly slice onion. Should measure about 3 cups. Saute' in butter until golden and tender. Add salt, pepper and basil and blend. Roll out pastry and cut into six 6" squares. Spoon cooked onions in centres of squares. Sprinkle with cheese. Moisten edges of pastry and fork to seal. Pierce tops for escape of steam. Brush with milk. Place on ungreased baking sheet. Bake at 400°F for 25 to 30 minutes, or until golden brown.
Makes 6 turnovers.
Never Fail Pastry
5 cups pastry flour
1 teaspoon salt
1 teaspoon baking powder
1 lb Tenderflake lard
1 egg
Milk
2 tablespoons lemon juice
Break lard into small pieces into dry ingredients. Break egg into measuring cup and add mil to fill cup, plus lemon juice. Mix together. Can be frozen - divide into one crust portions to freeze.
