Key Lime Cupcakes
Key Lime Cupcakes
Yellow cake mix + ingredients indicated on box to make the cake
6 tablespoons (plus more) Key Lime juice
1 can sweetened condensed milk
whipped cream
Lime slices or candy & graham cracker crumbs for garnish, if desired
Prepare the cake mix batter as per package directions, EXCEPT substitube 1/3
of the amount of water for Key Lime juice. When batter is prepared, spoon
into cupcake cups and bake as indicated on the box; cool.
Mix together the can of sweetened condensed milk and the 6 T. of juice.
Spoon this mixture into a ziploc bag, or pastry bag. Snip off one corner and
fit a piping tip into the corner. To fill the cooled cupcakes, push the tip
down into the top of a cupcake, then squeeze the filling in, just until it
starts to come out the top.
Top each with whipped cream, and garnish with graham cracker crumbs and lime slices if desired. Store in the refrigerator until serving time.
