Uncle Lou's Grilled Fish In A Boat
Years ago when grilling fish at home was a novelty, Uncle Lou would whip out this simple dish and amaze everyone. It still stands the test of time and is the perfect dinner on a warm summer night.
2-3 lbs White Fish (Firm like Mahi Mahi)
2/3 C Teriyaki Sauce
1/3 C Butter (Melted)
Tabasco Sauce
1 1/2 C Bread Crumbs
1/2 C Parmesan Cheese (Grated)
Spray Oil

Make a boat of aluminum foil slightly larger than the fish with the sides
rolled up about 1". Place in an old metal baking pan or other grill capable
metal pan(maybe a cast iron skillet).
Mix the teriyaki, butter and tobasco. Pour over the fish.
Mix the bread crumbs and Parmesan Cheese. Pat onto the top of the fish
fillets.
Place pan on the center of a hot grill and close the lid. "Bake" until
tender. Check often for cook time will vary with the thickness of the fish.
