Fish Fillets with Mushroom Sauce
2 Tbsp. butter
1 cup sliced mushrooms
2 green onions, chopped
2 Tbsp. flour
1 Tbsp. chopped parsley
1/2 tsp. salt
1/2 cup milk
1/2 tsp. lemon peel, if desired
1 lb. fish fillets
Preheat oven to 350 degrees. Grease a 2 quart glass baking dish and set aside. In large skillet, melt butter and cook mushrooms and onions over medium heat until tender, about 3-4 minutes. Stir in flour, parsley and salt and cook and stir for 1 minute. Add milk and cook and stir until thickened and bubbly. Remove from heat and add lemon peel.
Place fillets in prepared baking dish and cover with sauce. Bake at 350 degrees for 15-20 minutes or until fish is cooked and flakes when tested with fork. 4 servings
