Apricot Salsa Chicken
1/2 c. flour
salt & pepper
1/4 tsp. paprika
6 boneless, skinless chicken breast halves
3 tbsp. vegetable oil
1 jar (16 oz) salsa
1 jar (12 oz) apricot preserves
1/2 c. apricot nectar
Hot cooked rice
In shallow bowl, combine first 3 ingredients. Add chicken, toss to coat. In a skillet, brown chicken in hot oil; drain. Stir in salsa, preserves & nectar; bring to a boil. Stir in salsa, preserves & nectar; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until sauce thickens and meat juices run clear.
